Turkey Meatballs
Ingredients
1 small onion,diced
1 tspmincedgarlic
1 tspketchup
1 tspItalianSeasoning
1 tspsalt
1 tsppepper
1 lbgroundturkey
Directions
1) Preheatovento400°F
2) Put all ingredientsintolarge mixingbowl, putondisposable
glovesand combine ingredients withhands
3) Form mixture intoballs
4) Spray bakingpanwithcookingor bakingspray
5) Put meatballsonbakingsheet andputinovenfor15
minutes

Roasted Cauliflower
Ingredients
Headof freshcaulifloweror12 ozbag of frozencauliflower
1 ½ tsp mincedgarlicor½
tsp garlicpowder
2 Tbspolive oil
Gallonsize resealable bag
¼ tspsalt
¼ tsppepper
¼ cup ParmesanCheese
Directions
1) Preheatovento375°F
2) Chopheadof cauliflower
and rinse thenlet
thoroughlydry,orprepare
frozenbagaccording to bag
instructionsandthenchop
3) Place cauliflowerinagallonsize resealable bag
4) Addgarlic,2 Tbsp olive oil,salt, andpepper
5) Shake yourresealable bagwell until coated
6) Spreadout onbakingsheet
7) Place on toprack andbake for about30 minutes, until cauliflower
isbrown
8) Sprinkle Parmesancheese ontopwhenitcomesoutof the oven

2. Spinach Chips
Ingredients
2 large handfulsof spinach
2 Tbspolive oil
1/2 TbspItalianherb seasoning
pinchof salt

1) Preheatovento350°F

3) Pat downspinachwithpapertowel if wet
4) Place all ingredientsinlarge mixingbowl
5) Mix withspatulauntil spinachisevenlycoated
6) Covera bakingsheetwithparchmentpaper,orspraybaking
sheetwithcookingspray
7) Place leavesonthe panso that theyaren’toverlapping(this
will allowthemtocookevenly)
8) Bake for 5 minutes,turnchipsoverwithspatula,putbackin
ovenforanother5 minutesuntil crispy

Fiber One Pumpkin Bars
Ingredients
2 C FiberOne™ original brancereal 2 tsp bakingpowder
3/8 c plainGreekYogurt 1 tsp cinnamon
½ C orange juice 1 tsp bakingsoda
1 15oz can pumpkin(notpumpkinpiemix) ½ tspginger
2 eggs ¼ tsp salt
1 ½ C all-purpose flour 1 C choppedwalnuts
¾ C sugar
¾ C apple sauce

Directions
1) Preheatovento450°F
2) Spray 15x10x1-inch panwithcookingspray
3) Place cereal in gallonsize resealablebag;seal bagand
pound withfist,or run cereal througha foodprocessor
4) In large bowl,beatGreekyogurt,orange juice,the pumpkin,
and eggswithwhisk,fork,orelectricmixeronlowspeed
until well blended
5) Stirin crushedcereal;letstand10 minutes
6) Beat inflour,sugar,bakingpowder,cinnamon,bakingsoda,
ginger,andsaltremainingonlowspeeduntil well blended
7) Stirin walnutsandspreadevenlyinpan
8) Bake 35 to 40 minutes
9) Cut bars whencooled
