3. MELON AND CHRUNCHY BRAN
POT
INGREDIENTS
½ x 200g pack melon
medley
150g pot fat-free yogurt
2 tbsp fruit & fibre cereal
1 tbsp mixed seed
1 tsp clear honey
PROCESS:
Top melon medley with yogurt,
then sprinkle over cereal mixed
with seeds. Drizzle over honey and
eat immediately.

WALNUT
HOUMOUS WITH
VEGGIE DIPPERS
PROCESS:
Put the chickpeas, garlic, pepper, tahini
and lemon juice in a bowl. Blitz with a
hand blender or in a food processor to
make a thick purée. Stir in the walnuts.
Pack into pots, if you like, and serve with
the veggie sticks. Will keep in the fridge
for 2 days, although the vegetables are
best prepared fresh to preserve their
vitamins.
INGRIDIENTS
400g can chickpea, drained
1 garlic clove
1 large roasted red pepper
from a jar (not in oil) (100g)
1 tbsp tahini paste
juice ½ lemon
4 walnut halves, chopped
2 courgettes cut into batons
2 carrots cut into batons
2 celery sticks, cut into

5. CREAMY MANGO & COCONUT SMOOTHIE
PROCESS:
Measure all the ingredients or use a
tall glass for speed – they don’t
have to be exact. Put them into a
blender and blitz until smooth.
Pour into 1 tall glass (you’ll have
enough for a top up) or two short
tumblers. Cut the passion fruit in
half, if using, and scrape the seeds
on top.
INGRIDIENTS:
200ml (½ tall glass) coconut milk
4 tbsp coconut milk yogurt
1 banana
1 tbsp ground flaxseed,
sunflower and pumpkin seed
120g (¼ bag) frozen mango
chunks
1 passion fruit, to finish
(optional)

6. PROCESS:
Halve and stone the avocado then
scrape out the flesh into a bowl.
Squeeze in the lime, season, then
mash roughly with a fork. Toast the
ciabatta, spread with mashed
avocado, top with turkey and finish
with ground black pepper.

1 avocado
juice ½ lime
2-3 small slices ciabatta

AVOCADO TOAST
7. PROCESS:
Scoop the pulp of the passion fruits
into a blender and add the banana,
mango and orange juice. Purée
until smooth and drink
immediately, topped with ice cubes.

300ml orange juice
