Dear members and friends
The Confrérie de la Chaîne des Rôtisseurs de Monaco will be
celebrating its 40th anniversary next December, the perfect
opportunity to organise its Grand Chapitre International.
We therefore invite you to join us in Monaco from 29 November to
2 December 2023 for a festive, gastronomic and cultural stay,
gastronomic and cultural experience.
You will be able to meet up with old friends from all over the
world, make new contacts and celebrate this event with
enthusiasm.
Our Board of Directors has put together a very attractive
programme that is sure to attract many participants from all over
the world,
Right in the centre of the Principality in Monte-Carlo, around the
Place du Casino, the completely renovated Hotel de Paris awaits
you with prices negotiated especially for the Chaîne.

On the other side of the hotel, the Hôtel Hermitage is also
waiting to welcome you at very competitive rates.
Over the years, Monaco has become one of the world's leading
destinations for hotels and fine dining.
It has attracted some of the world's top chefs, both French and

On 29 November, a gourmet stopover at the restaurant of the
Automobile Club de Monaco, a private club that will be opening
its doors to us specially.

3. On 30 November, Christophe Cussac's two-Michelin-starred Métropole will tantalise our taste
buds.
The following day, December 1, we'll be welcomed to the Salle Belle Époque at the Hôtel
Hermitage by Philippe JOANNES, Meilleur Ouvrier de France.
On Saturday 2 December 2023, our brotherhood will be privileged to have exclusive access to the
Salle Empire, a prestigious room at the Hôtel de Paris.
In this emblematic setting, where the multi-Michelin-starred Alain DUCASSE officiates, you will
discover inventive cuisine worthy of a gala dinner.
A host of surprises await you...
This great moment of conviviality around the table will be preceded by the induction ceremony,
orchestrated by the most Monegasque of Italians, Doctor ROBERTO ZANGHI, Honorary Bailiff
Delegate of Italy and member of the Magistral Council.
Excursions around the Principality as far as Cannes and Grasse, with a foray into Italy, will be
offered each day.

14:00 Early afternoon meeting with your local private
guides.
Visit Monaco and Monte Carlo. Discover the hidden
gems of the 2ème smallest country in the world.
Understand the evolution of the city and the incredible
changes that have taken place over the last century.
Trace 800 years of history of a city and a princely
family: the Grimaldis. During your visit, sample
Monaco's local snacks and specialities. At the end of the
day, return to your hotel.

Excursion
An incredible olfactory experience!
• 08:30am Early morning drive to Grasse with your local guide and private driver
for the day. A veritable perfume capital, discover the typical narrow streets of
Provence.
• 10am Take part in a private cologne creation workshop, create and personalise
your own eau de toilette. Discover the secrets behind the manufacture of perfumes
and cosmetics. You'll also enjoy a guided tour of the factory and leave with a
small gift.
• 12 noon Lunch in a traditional restaurant serving local specialities.
• 2 p.m. In the afternoon, drive to Cannes, the perfect opportunity to discover the city
on a walking tour from the famous Croisette to the Marché Forville, with
commentary.
• 15:15pm Then off to Villeneuve-Loubet to discover the Musée Escoffier and its
secrets of culinary art.

Dinner at the Hôtel le Métropole, prepared by chef Christophe
CUSSAC, Christophe Cussac is one of the few chefs to have
practised three cuisines. The first, that of his master Joël
Robuchon, the second, acquired at his parents' Relais & Châteaux
hotel-restaurant, Abbaye Saint-Michel in Tonnerre, is inspired by
Burgundy, and the third, southern cuisine, which he has sublimated
at the head of the kitchens at La Réserve in Beaulieu-sur-Mer.
Today he welcomes us to Monaco's 2 Michelin-starred Métropole.

10. • 9am Today we head for Italy with your local guide and private driver.
Your first stop is the famous town of Dolce Acqua.
• 10:30 Discover traditional architecture, with houses that seem to be
interlocked and clinging to the mountain. This is the perfect opportunity to
take a pleasant, quiet stroll through the charming pedestrianised streets.
• 11:30 At the end of the morning, taste local Italian wines at a winery in
the hinterland.
• 12.45 Lunch in a typical restaurant to discover the specialities of the famous
Italian gastronomy.
• 14:30 Early afternoon drive to Imperia. Discover a coastal town with narrow
streets and colourful houses. You can visit the Villa Grock botanical
garden, an exotic garden full of tropical plants and fruit trees.
• 16:30 Return to Monaco and arrival at the hotel at around 18:00.

Membership of the Chaîne des Rôtisseurs is
by invitation only.
Most new members have been recommended
by friends who are themselves members, but
it is also possible to find out more directly
through our national Chapters (or
"Bailliages", as we say within the Chaîne).
At the induction ceremony, the new member
is officially accepted into the Association and
presented with the traditional coloured cord
and diploma.
Professional and non-professional members
are given the opportunity to meet at local,
national and international events organised
by the Chaîne.
