We hadonlypure saltedor Chorkaaddedsaltedpreparationandcleanwhite saltedlime preparation
manydecadesago.As the time passedourpreparationsmixedwithotherIndianwaysof cooking
and has gone forlotsof modifications.Let’ssee how we canprepare alime currywithoutmuch
bittertaste or no bittertaste.
Wildlemon : 1 cup, cut intosmall pieces.
Ginger : 2 tablespoons,chopped
Garlic : 2 tablespoons,chopped
Kanthari chilli : 1/4 cup
Curry leaves : 2 stems
Fenugreekseeds : 1 tablespoon
Asafetida : 1 teaspoon
Salt : 1 tablespoon
Sugar/white jaggary : 1 tablespoons
Vinegar /Chorka : 1/3 cup
Water : 1 cup, lukewarm
Chilli powder : 1 tablespoon
Turmeric powder : ½ teaspoon
Gingelly oil : ½ cup
Mix cut lime pieces with ginger, garlic, kanthari chilli and curry leaves and
transfer it to a glass jar, then add fenugreek seeds, asafetida, sugar, salt
and vinegar and mix it. Add half of the boiled (lukewarm) water and allow to
settle it down. After 6 hours, yopu can add remaining water and close the
jar. Open the jar next day and add half of the gingelly oil and keep it
closed. Keep it for 14 days, open the jar every day and see if all fine.
Aftertwoweeks.
Heat oil andsputtermustardseedsandallow itto cool downthenadd chilli powderandturmeric
powderandpour iton the pickledlime andmix itverywell.Again keepitforcouple of daystill you
see that itis readyto be usedas a pickle.Now yourWildlime curryisready.Addsaltor sugar to
balance the bitteror sourtaste.
