5. THE ASPARAGUS
There are different varieties of green and white
asparagus.
Some of them grow wild in the country.
The asparagus grow well in temperate climates.
The soil must be sandy and well drained.
When the temperature in the soil rises up to 10/12
degrees celsius the shoots begin to grow.
They are then cut at different heights from 8 to 25 cm
from the gownd. The asparagus can be productive for
more then 10 years.
7. Fusilli with asparagus and
sausage
Ingredients for 4 people:
350 gr Pasta Fusilli
100gr Sausage
150gr boiled
Asparagus
Oil Butter
Bechamel
Salt
Black Pepper
Parmesan Cheese
Preparation:
1)In a pan fry onion
in oil and butter,
add some sausage
and blend with
white wine.
2)Meanwhile, boil
the asparagus, and
cook pasta in
salted water 3)
pour fried onion
into the pan with
this sausage, add
bechamel sauce,
grated parmesan
cheese and black
pepper.

Recommended wine:
Sangiovese di
Romagna DOC 2011.
it is a young red dry
wine with an intense
ruby red/violet color.
Intense flavor, violet
flower, fruity, slightly
tannic and soft
enough.
