The National Shellfish Sanitation Program (NSSP) is a voluntary cooperative program
that relies on regulatory controls by the State Shellfish Authority (SSA) to ensure safe
molluscan shellfish. It was developed to ensure that only safe and sanitary shellfish are
offered for sale in commerce.
It involves:
State laws and regulations for sanitary control of molluscan shellfish, both in the growing,
harvesting and processing phases.
An FDA annual review of each State Shellfish Control Program.
Cooperation from the shellfish industry to obtain shellfish from safe sources, maintain sanitary
operating conditions, place tags or labels with the proper certificate numbers on each package,
and keep records that shows the origin and disposition of shellfish.
