Keto Chicken Alfredo with Zoodles
Ingredients:
● 2 medium zucchini
● 2 boneless, skinless chicken breasts
● 2 tablespoons olive oil
● 2 cloves garlic, minced
● 1 cup heavy cream
● 1/2 cup grated Parmesan cheese
● Salt and pepper to taste
● Fresh parsley, chopped (for garnish)
Instructions:
1. Using a spiralizer or a julienne peeler, make zucchini noodles (zoodles) out of the
zucchini. Set aside.
2. Season the chicken breasts with salt and pepper. In a large skillet, heat 1
tablespoon of olive oil over medium-high heat. Add the chicken breasts and cook
for about 6-8 minutes per side, or until cooked through. Remove the chicken from
the skillet and let it rest for a few minutes. Slice the chicken into thin strips and
set aside.
3. In the same skillet, add the remaining 1 tablespoon of olive oil and minced garlic.
Sauté for 1-2 minutes until fragrant and lightly golden.
4. Reduce the heat to low and add the heavy cream to the skillet. Stir well to
combine with the garlic. Let the cream simmer for 2-3 minutes.
5. Gradually whisk in the grated Parmesan cheese until it melts into the cream
sauce. Continue stirring until the sauce thickens slightly. Season with salt and
pepper to taste.
6. Add the zucchini noodles to the skillet and toss them in the Alfredo sauce until
they are well-coated. Cook for an additional 2-3 minutes, or until the zoodles are
heated through but still slightly crisp.
7. Finally, add the sliced chicken to the skillet and gently toss to combine
everything.
8. Remove from heat and garnish with fresh parsley.
9. Serve immediately and enjoy your keto-friendly Chicken Alfredo with Zoodles!
Note: Feel free to add additional seasonings or spices, such as Italian herbs or red
pepper flakes, to enhance the flavor according to your preference.
