Hello and welcome to the Festive Season’s By Barclay
newsletter. Firstly, we hope you are safe and well and
adjusting to what is certainly going to be a somewhat surreal
Christmas due to Covid-19. Secondly, we hope you enjoy your
By Barclay Festive Hamper: Piggy Grazing Box and it brings
some much needed Christmas cheer!
PRODUCING FOOD LOCALLY
IN AYRSHIRE
We’re excited to have collaborated on these
Festive Hampers with a range of talented
producers of artisan delicacies and do hope
you enjoy eating them as much as we have
putting them together! All the produce for
the Piggy Treats are from our Tamworth
“ginger” pigs; we have co-produced these By
Barclay X Twenty Four Carrot with the hugely
talented Fiona and Suzanne. Our slower
maturing Tamworth pigs are outside bred,
reared and fed naturally and enjoy a stress
free lifestyle giving the pork a distinctive
texture and delicious taste. Tamworth Pigs
are listed in the Rare Breeds Society as
“vulnerable” with as few as 200 to 300
breeding sows remaining in the UK.
We are passionate about food and
supporting rare and native breeds and
small scale producers locally here in
Ayrshire.
The baked goodies are By Barclay X
JeJu’s Bakehouse using our Limited
Edition By Barclay Marmalade and Apple
Ketchup. We also have included in your
Festive Hamper Carrick Coastal Honey
from Iain Kirkpatrick, Smoked Salmon
from Pieroni’s and Blackthorn Salt. At By
Barclay we have set out to create artisan
premium produce – the way it’s meant
to be – locally in Ayrshire. We believe
eating local food helps reconnect us to
our food culture and landscape. Thank

Nothing signals Christmas for us like a
gluttonous batch of home-made Sausage
Rolls! These are based on a classic Delia
Recipe.
MAKES ABOUT 24
PASTRY
You can make your own Pastry but we
usually cheat and use frozen Puff Pastry.
FOR THE FILLING
1 medium onion, grated
500g premium artisan pork sausagemeat
1 teaspoon fresh or dried sage
1 egg, beaten to glaze
You will need two baking sheets, lightly
greased.
PRE HEAT THE OVEN TO GAS MARK 7
or 220 C
METHOD
To make the Sausage Rolls mix the
sausagemeat, onion and sage together in
a mixing bowl. Roll out the pastry on a
floured surface to form an oblong – as
thin as you can – and cut into three
strips. Divide the sausagemeat into
three, making three long rolls the same
length as the pastry. Place one roll of
sausagemeat on to one strip of pastry.
Brush the beaten egg along one edge,
then fold the pastry over and seal as
carefully as possible. Lift the whole thing
up and turn it so the sealed edge is
underneath. Press lightly, and cut into
rolls about 5cm long. Snip three V-
shapes in the top of each roll with
scissors and brush with beaten egg.
Repeat with the other portions of
sausagemeat and pastry. Cook straight
away on the baking sheets in a high oven
for 20 – 25 minutes. Serve with By
Barclay Spiced Apple Ketchup!

REHEATING NOTES
Black Pudding Bonbons; Pork Stuffing Balls;
Sausage Rolls 180 Oven 10-15 minutes. Mini
Quiche warm through for 5 minutes. Potato
Cakes Microwave for 1 minute. Scotch Eggs
can be eaten cold! Eat within four days.
