Keto Cauliflower Fried Rice
Ingredients:
1 head cauliflower, riced
1/2 cup diced carrots
1/2 cup peas
1/4 cup diced onion
2 cloves garlic, minced
2 tbsp olive oil
2 tbsp soy sauce
1 tsp sesame oil
2 eggs
Salt and pepper to taste
Instructions:
Heat the olive oil in a large skillet over medium-high heat.
Add the onion and garlic and sauté for 1-2 minutes, until fragrant.
Add the carrots and peas and stir-fry for 3-4 minutes, until the vegetables are tender.
Add the cauliflower rice to the skillet and stir-fry for 3-4 minutes, until the cauliflower
is tender.
In a small bowl, whisk together the eggs and season with salt and pepper.
Push the cauliflower rice mixture to one side of the skillet and pour the whisked eggs
onto the other side.
3. Scramble the eggs until cooked through, then mix them into the cauliflower rice
