Ed’s letter
Well, we’re not running 27 marathons in 27
days (Eddie Izzard, is that really good for
you?) but here at Title we’ve been quietly
pushing our own boundaries. This month
is a particularly lovely issue, threaded
through with one of our favourite themes
– food & drink – and we’re thrilled to bits
with it. We’ve worked closely with our
food festival partners and the amazing
foodie people of Sussex and quite aside
from the arduous task of having to try lots
of amazing food, it’s been a fantastic issue
to put together.
We’re also quietly excited as our team
has now grown to the point where we’re
bursting out of our original little offices
and so we’re moving into a larger space.
As we passed our first year milestone
in February, finding ourselves almost
exactly 12 months later expanding has
been almost overwhelming. We are
all so grateful for the support we’ve
received and the welcome that our little
magazine has been given. And as our
team expands, so does our portfolio.
Look out for new magazines coming out
of Title Media over the next six months –
not only some of our own, but beautiful
publications for clients too.
To celebrate our growth and to thank
those who have supported us, we’re also
planning a big fat party coming up – so
keep your eyes peeled for your VIP invite
– it’s going to be THE party of the early
summer season! And if you’re not on the
list, don’t worry. We’re going to be doing
some crazy ticket giveaways via our social
media channels so if you don’t already
follow us on Twitter, Instagram, Facebook
etc, you’d better get cracking.
Finally I want to acknowledge our amazing

Rather than let their fruit rot on the
ground, local people brought in bags,
boxes and buckets bulging with ripe
apples last year for Trenchmore Farm
to turn into cider. And the first batch –
known as Silly Moo – from last autumn’s
harvest will be released on the spring
equinox, Sunday 20 March. 1,000 bottles
will then be collected by the Sussex
apple tree growers in return for the spare
apples they provided last autumn.
Although Bramley was the most common,
many fine varieties like Reverend James
Grieve and Worcester Permain were
fermented and carefully blended before
being bottled. The Silly Moo cider
orchard is also planted with over 15
traditional cider varieties from the West
Country, where cloudy, dry scrumpy
remains popular. By contrast, the Eastern
counties historically make lighter cider
from dessert and culinary apples.
By blending apples from the orchard with
those from local gardens, Silly Moo is a
marriage of East and West country styles;
plenty of tannic notes, a pronounced
fresh apple aroma on the nose, crisp and
light with a refreshing sparkle.
Described by Trenchmore’s Andrew
Knowles as a ‘civilised farmhouse cider’,
he explains, “The first press was really
popular, friends wanted to bring us their
apples and we thought maybe some
others locally would be interested. We
opened the yard on Sundays and the
response was amazing - the gardeners
of Sussex were delighted to have their
glut of apples used. People were so
enthusiastic - this is set to become an
annual event.”
The cider is called Silly Moo as the cattle
at Trenchmore Farm get very excited
at pressing time and devour the sweet
apple pomace.

This month we’ve fallen in love with the Parson’s Table in
Arundel a bit. Lee and Liz met 20 years ago at Claridge’s Hotel,
London, where Lee was a sous chef with a twinkle in his eye
and Liz was newly arrived in London, undertaking a four year
apprenticeship through The Savoy Group hotels.
They now have their own restaurant and we’ve been there a
couple of times already for an excellent lunch. We asked them

THE TOWNERThe gorgeous Towner Art Gallery
in Eastbourne has been awarded £450,000 from Arts Council England’s
Small Capital Grants fund. The award is being used to develop a ground
floor auditorium for presenting artists’ moving image, a film programme, live

life for me
Each month Joe McGann explores the ups and
downs of an actor’s life…

tie, I like to think. A solidity; a
trustworthiness alongside cool
savoir-faire…”
Actors and the self-tape
It’s become a part of every professional actor’s life. The call from the
agent comes; a casting director would like to look at you for a part, but
they’ve asked you to self-tape the audition for them, is that ok?
I have to admit that my heart always sinks a little. I’ve sent off at least 15
of these and have yet to get the job. I have tended til now to complete
and send these tapes under sufferance, disdainfully even, so as not to
get my own hopes up unrealistically. The constant existential tussle of
the jobbing actor; the thin line between confidence and self-delusion.
The call came 10 days ago, I was on holiday in Goa. Could I please
self-tape the scene that they had emailed and get it back in 24 hours?
It was for a part in a US TV mini-series about the men behind Harley-
Davidson; a good gig, in other words, so I resolved to give the self-tape
thing another go, and to do it in good heart.
I had three A4 sides of a scene to learn, with three other characters
involved, so I knew I’d need a friend to read in from behind the lens.
I would also need to hint at the character and the setting (1920s
America) so I needed to find something in my suitcase. I plumped for
a blue chambray shirt and a vintage Paisley bow-tie, with a linen jacket.
I would shoot the scene in medium close-up anyway, so my beach
shorts and flip flops would be out of shot. The daytime temperature
was reaching 35, so I’d shoot it in the cool of the morning, and the light
at about 8.30am on my balcony would be perfect, a nice bounce off
the river too, to light me kindly.
Next morning, after yoga and breakfast, I arranged the chair and asked
my friend Mollie to sit in it while I set up the camera and framed the
shot. This involved me fiddling about arranging
books, cushions and various toilet bag items in
such a way as to keep my iPhone steady so that
I could shoot the scene. After a few minutes and
some swearing, we were set. Action.
We did three takes and I picked what I thought was
the best. This is tough in itself but I plumped for
the one in which I thought I looked least needy,
and sent it from my phone to my agent in London.
Went off to the beach and put it out of my mind.
Que sera sera, as Doris wisely sang.
I arrived back to find my agent had emailed me
that I’d been offered the job. Two weeks filming
in Romania in March. Well, woo-hoo! I’d broken
my self-tape duck. I was glad, but also curious.
What made the difference? Was it my delivery, my
accent, the cleft in my chin? Was it the beautiful
setting, or respect for my 35 years of experience?
What had I learned?
Ultimately I reckoned it was the Paisley bow tie.
There’s something about a man who ties his own
bow tie, I like to think. A solidity; a trustworthiness
alongside cool savoir-faire that harks back to the
great days of Hollywood. Perhaps, anyway. It’s
just as likely to have been that I was cheaper than
others considered for the role. But I shall take it
as a sign to maintain both a positive professional
outlook, and my habit of shopping for quality
vintage gentlemen’s accessories.

HEALTHINESS
Making good food choices will help you maintain
good health and weight, as Lisa Moore explains
Understanding that foods high in sugar
and saturated fat will lead to sugar
cravings is key, as they create a quick
energy high and then a big energy
drop. That is when you’ll reach for the
chocolate or crisps and the vicious
cycle begins.
Here are my top tips for a healthy diet:
1) Enjoy your food but EAT SLOWLY –
sometimes we don’t realise how much
food we eat. We shovel it in as quick as
we can. This can lead to overeating, as
it doesn’t give our bodies time to tell
us when we are full. Try putting your
cutlery down in between each mouthful
and truly savour your food.
2) Eat more vegetables (6-8 portions a
day) – At least half of your plate should
be vegetables or salad. Add variety for
texture and taste. Always ensure you’ve
washed them to get rid of chemicals
and, if you can, buy organic.
3) Drink plenty of water – keep a bottle
of water on your desk at all times, when
it’s empty, fill it up.
4) Eat protein at each meal – This will fill
you up and help reduce sugar cravings.
Your body works harder to process
protein so you’ll burn more calories
this way too. Choose lean options such
as turkey, chicken, venison, salmon or
mackerel.
5) Try something new once a week –
Never tried aubergines? Find a recipe
that looks appealing and give it a go.

WHO IS DENISE RAVENALL?
My professional background was in luxury hotels and so I was
familiar with using the high end beauty products that would
be in these hotels around the world. And, like most people I
really enjoyed collecting them, and using them in my bath
time routine. However, after the birth of my first child my skin
became hyper-sensitive and would come out in rashes if I
used most products. So I was forced into examining the back
of skin care products and checking what the manufacturer was
putting inside them. I quickly established that cost didn’t always
equate quality. Chemicals and synthetic perfumes seemed to be
in most products. Unable to find a brand that offered exactly
what I wanted, for myself and my three children I decided out of
necessity to make my own.

36. Street Style - ArundelEach month we make it our business to explore Sussex and check out what’s going
on. This month, the stately ancient town of Arundel gets the Title treatment

Clive has owned and worked in Castle Chocolates in Tar-
rant St for over 20 years and is an Arundel legend. Several
of the people we met told us they bought sweets from
him as children and our Frida fell in love with him and his
salted liquorice. His daughter is taking over the business
but Clive isn’t ready to hang up his apron; he told us he’ll
still be serving truffles and sugar mice for a long time yet.
Sian and Leanne from Worthing had
popped over to visit the shops and
said that they liked the variety of ‘not
on the high street gifts’ in Sparks Yard.
Both girls were wearing jeans from
Topshop and while Sian wore hers
with a jumper and coat from New
Look, Leanne had chosen a jumper
from Zara and coat from Primark. We
loved her Ted Baker handbag.

David spotted us admiring a leather chair outside
the Arundel Militaria market where he has spent
26 years and took us into the courtyard to see his
collection of sculptures. He was happy to pose in
a selection of hats from the market surrounded by
his three wise monkeys.
Georgina and Paul were visiting Arundel on a day trip
in the hope of visiting the castle if the rain stopped for
long enough! Matt caught them for a photograph as
Paul was looking very dapper in a coat by Hugo Boss
with Ralph Lauren jeans, George West shoes and a
stylish Lyle and Scott scarf. Georgina had teamed her
Ted Baker dress with a lovely Michael Kors handbag
and shoes by Russell and Bromley.
Liz and Lee Parson met while they were working in
Claridge’s Hotel kitchens. They’ve worked all around the
world but have settled back in the UK with their twin girls
and have owned and run The Parson’s Table in Castle
Mews for just three months. They were getting ready to
open for lunch with their restaurant manager Connor
when we wandered past but they stopped to give us a
tour of the newly refurbished restaurant and Lee and
Connor stopped for a picture on their patio.

Barbara Hogan, better known as Mrs Arundel

39. Who is Mrs Arundel and what you do?
I am Barbara Hogan and am employed by my nephew,
Ash Kent, who owns the Visit Arundel website and is in
partnership with Mike Tod of Tents N Events, the marquee
and hire company. I do all the business development for
both companies which involves spending a lot of time
networking locally, supporting the town of Arundel however
I can and in particular with website advertising for all the
events they put on. I deal with our many and varied clients
around the area. I look after our clients which include the
wedding venues that we have throughout the area. I have
been involved with horseracing for many years and I work
on race days at both Brighton and Fontwell racecourses,
where I am usually looking after owners, trainers, winning
connections and providing racecourse tours. I am really
lucky as I really enjoy all my jobs!
Describe yourself in three words
Friendly, confident and talkative.
What is the thing you are most proud of?
My two grown up daughters – one is off to Uni in September
studying for a primary school teaching degree. The older
one works for Goodwood.
Do you have any regrets?
No I don’t think I have any.
What phrase or word annoys the hell out of you?
The casual and, I think, condescending reply when I am
asking if I can help someone and they say “If you want” or
“if you like” when a simple YES PLEASE is really the answer I
would like to hear.
If you could go back and give your 18-year-old self some
advice, what would it be?
Only worry about the things you can actually change and
then change/improve them. Don’t waste your time worrying
about things you cannot and never will be able to alter.
If you were Queen of Sussex for a day, you would…
Try to persuade all the people living in our area to visit the
beautiful South Downs and show them all the wonderful
wildlife and plants which inhabit the Downs. I’d try to show
and explain to them all the history of the Downs and how the
past has shaped where we are today but also how fortunate
it is that so much is still unchanged and wild. I feel that having
spent my whole life riding, walking and living on the Downs
that too many people in this area never make the time to see
what is literally on their doorstop and the South Downs is a
truly amazing place to live and visit.

43. Tell us about it
The Waterhouse Bar is named after the
famous architect who designed the
Metropole in 1890 and is perfect for
afternoon tea by the sea. It’s a modern
space with leather alcove seating and
grey wood panelling and feels really
luxurious, but in a relaxed sort of way.
It’s the sort of place you might find
ladies that lunch – we saw a few of those
– or couples taking their time over food.
What did you eat?
We opted to try both the Seaside
Delights and Traditional Afternoon Tea,
much to the amusement of the two
ladies on the next table (only seemed
fair if we were reviewing it to try it all!) It
was all delicious but the highlights had
to be the scones which were incredibly
light and served with clotted cream,
and the Brighton Rock Cheesecake
which had a really refreshing minty
taste. That was best eaten last actually;
it was good for cleansing your palette.
Both options looked amazing though,
the presentation was well thought out
with the Traditional served on a cake
stand with a salad garnish at the centre
of the sandwiches and the Seaside
Delights on a wooden block giving
it a much more modern feel but still
beautifully presented.
Sum it up for us
The food was lovely but it was the
experience as a whole that would
inspire us to go back. Not only did we
get to sit, relax and eat A LOT of cake but
the service was exceptional; we were
looked after by Kika who couldn’t have
been more attentive. She was happy to
answer our questions and checked on
us often enough that we didn’t feel we
had to attract her attention to ask for
anything but not so often that we felt
rushed. What was also great was that
they cater for any dietary requirements
and actually list a gluten free tea so you
can order it as an option rather than a
‘special request’. It really was the perfect
way to spend a Friday afternoon and, to
top it all off, Frida and I went to gaze at
the vintage jewellery in the Lanes, to
burn off the calories, of course!

bringing with it the joy of Easter, and lamb! Two beautiful
springtime dishes here to make your mouth water…
Ballymaloe Roast Rack of
Lamb With Fresh Apple and
Mint Chutney
A rack is a deliciously tender cut of lamb that, once it’s been prepared, is easy to carve and serve. Ask your
butcher to prepare it for roasting if you’d rather not do it yourself. The apple and mint chutney is particularly
good with young sweet lamb in the spring or summer.
Serves 4–6 as a main course
2 racks of spring lamb (6–8 cutlets each)
Salt and freshly ground black pepper for the fresh apple and mint chutney
1 large cooking apple (such as Grenadier or Bramley Seedling), peeled and cored
Large handful of fresh mint leaves – Spearmint or Bowles mint
50g (2oz) onions, peeled and roughly chopped
20–50g (¾–2oz) caster sugar (depending on tartness of apple)
Salt and cayenne pepper, to season

45. TO COOK
Preheat the oven to 220°C (425°F), Gas mark 7.
Score the fat of the racks into roughly 2–3cm (¾–1¼in) squares or diamonds, making sure to
cut through only the fat, not the meat. Sprinkle the scored fat with salt and pepper and place
on a roasting tray, fat side up. You can either cook it straight away or refrigerate until needed.
Roast the racks for 25–35 minutes depending on the age of the lamb (very small racks in
spring might take just 25 minutes, but larger racks later on in the year might take 35 minutes
to cook) and degree of doneness required. When cooked, remove the lamb to a warm
serving dish. Turn off the oven and leave the lamb to rest for 5–10 minutes before carving.
Meanwhile, put the apple, mint, onions and sugar in a food processor and whizz to combine,
then season with salt and cayenne pepper.
Carve the lamb and serve 2–3 cutlets per person, depending on the size of the cutlets.
Serve with the chutney.

of a craft project than an actual recipe, but we just love this. Great fun
to do with the kids, and utterly delicious too.
The inclusion of salty pretzel sticks along with the sweet chocolate is
what makes this so delicious; a real tweet treat for Easter. You could
even make the nest a feature of an Easter Egg hunt – every discovered
egg must be brought back to the nest, and then everyone can dive in!

100g butter, roughly chopped
2 tbsp golden syrup
200g dark chocolate, chopped into small pieces
200g milk chocolate, chopped into small pieces
100g large shredded wheat cereal biscuits
100g salted pretzel sticks
100g desiccated coconut

50g dark chocolate, chopped into small pieces
assortment of foil-wrapped chocolate eggs
extra pretzel sticks
extra chocolate-covered biscuit sticks, such as Mikado; chocolate sticks, such as
Matchmakers; or chocolate flutes, such as Elizabeth Shaw’s

tO Make
take a piece of baking parchment and scrunch it up in your hands, then smooth it out
(this makes it easier to manipulate). Use the parchment to line the frying pan.
Put the butter and golden syrup in a large heavy-based saucepan. set over a gentle heat and warm,
stirring occasionally, until the butter has melted. Add all the chopped chocolate for the tiffin and stir the
mixture until smooth and combined. remove the pan from the heat.
set aside one of the shredded wheat biscuits. Break up the remaining shredded wheat and the pretzel sticks and
add these to the saucepan, along with the desiccated coconut. combine everything gently but thoroughly. transfer
the mixture to the lined frying pan, pressing it up the sides with your fingers to produce a hollow nest shape.
refrigerate until set, preferably overnight.
remove the nest from the fridge and allow it to return to room temperature. Melt the extra chocolate for decorating
in a microwave or a heatproof bowl set over a pan of simmering water (bain-marie). Break up the reserved
shredded wheat biscuit in a bowl. remove the nest from the frying pan, keeping it on the parchment. Using the
paintbrush or a pastry brush, paint the melted chocolate over the nest. scatter over the shreds of shredded wheat
and press them on to the surface of the nest so they adhere to the melted chocolate – apply more chocolate if any
shredded wheat fails to stick. Leave to set before filling the nest with an assortment of chocolate eggs.

If you don’t like coconut, you can use a mixture of salted peanuts and raisins instead. To create an even more
realistic-looking nest and provide even more sweet tweets to nibble on, sit the nest in a bed of ‘twigs’ made from
extra broken-up pretzel sticks and chocolate sticks or flutes.

We’re proud to support the FareShare Sussex and Rockinghorse Children’s Charity at our events
FareShare Sussex is a charity project that fights hunger and tackles
food waste by redistributing surplus food to where it is most needed
in the local community. Every month they prevent around 40 tonnes
of food from going to waste and instead deliver it to organisations
serving vulnerable people including lunch clubs, food banks and

Rockinghorse are the official fundraising arm of the Royal Alexandra
Children’s Hospital (the Alex) where they raise money for life-saving
and cutting-edge medical equipment, while ensuring that children
are treated in an environment better suited to their needs. They also
support the Trevor Mann Baby Unit (TMBU) based at the Royal Sussex
County Hospital in Brighton and its sister site, the Special Care Baby
Unit (SCBU) at the Princess Royal Hospital in Haywards Heath.

51. As we enter our 14th year, this May sees
the most exciting food festival ever to hit
the seafront and streets of Brighton &
Hove. The success of the ever-growing
festival is entirely reflective of the
dynamism of the food and hospitality economy that we find in the city and
surrounding county. From our internationally acclaimed wine industry through
to our burgeoning independent restaurant scene, 2016 really is an exciting
time for food and drink in our region.
Like much of what happens in our wonderful city, the Brighton & Hove Food
and Drink Festival is a very unique vehicle driven by the passion and talent
of the festival team and the hundreds of stakeholders we work alongside
each year. Despite our scale and scope, we are a not-for-profit Community
Interest Company with specified aims and objectives in terms of supporting
and nurturing the local food economy, promoting both good and local food
and drink to residents and visitors, and taking our food and drink offering
to the wider world in terms of both export opportunities and gastronomic
tourism promotion. We receive no public funding, so rely entirely on the on-
going generosity and support of our patrons, sponsors and the hospitality and
food community of our region.
Uniquely for a major food festival - whether here in the UK or overseas - all
of our outdoor activities are FREE to enter. Other than the tasty morsels from
our 80 plus stallholders on Hove Lawns at our Sussex & The World Weekend,
we offer a varied offering of events and activities including our Children’s
Food Festival, Live Food Show, Beach BBQ Cook Off, live entertainment and
our Taste The World area in conjunction with this year’s international partners
from Sicily, Sweden, The Netherlands, Portugal, Guernsey and India.
2016 is a truly momentous time for Sussex as this year we host the
International Cool Climate Wine Symposium right here in Brighton & Hove,
running alongside the food festival. ICCWS happens every five years, and
sees hundreds of cool climate wine makers and wine media from across
the globe descend on our city for a conference and exhibition at the Hilton
Brighton Metropole that happens once every five years. Previous host
cities have included Christchurch in New Zealand, Oregon in the USA and
Tasmania in Australia. It really is a mark of how important Sussex and the
south of England have become in terms of quality wine production in the
past two decades, and as an organisation we’re very proud to be delivering
the consumer events for ICCWS alongside our friends at Butlers Wine Cellar,
Laithwaites and English Wine Producers.
This year’s Brighton & Hove Food and Drink Festival ‘Spring Harvest’ has a
really exciting 10-day programme that involves oodles of truly delicious food
and drink businesses. We’ve an Indian Banquet at Hotel du Vin with Curry
Leaf Café, and beer tasting on Hove Lawns, both supporting FareShare
Sussex; cool climate themed wine dinners at Terre à Terre, The Set Restaurant
and Jeremy’s Restaurant; fusion chef, producer and mixologist events at 64
Degrees and The Plotting Parlour; the UK’s largest ever English Wine festival
on Hove Lawns – along with a world record attempt for the biggest cheese
board with La Cave à Fromage; a punk wine tasting supporting Rockinghorse
children’s charity; a Swedish tea dance with Visit Sweden, Metrodeco and
Swing Sussex; an amazing brunch with the hugely talented chef Simon
Mckenzie from the five star Old Government House in Guernsey at Market;
and we’re even looking after our four-legged friends with The Dogs Dinner.
The city’s food awards also launch on 1 April with public nominations in over
15 categories running until the end of August before our panel of judges head
out to secret shop and interview the finalists with our grand final hosted in
early November where we crown the creme de la creme of our hospitality
and food industry.
I really hope I’ve got you salivating for more. And there is more. The food
festival organisation runs across the year with our International Chef Exchange
programme – this year we’re working on partnerships in the US, Sweden, The
Netherlands and India –, our monthly Sussex Wine & Gourmet Bus Tours taking
you to vineyards and artisan producers, and we also do the whole Brighton &
Hove Food and Drink Festival again from 25 August to 4 September.
As ever, I’d like to give a heartfelt thanks to my festival colleagues, our
patrons, sponsors and media partners, and of course to the many hundreds
of food and hospitality businesses who support us across the year. Its only
through their commitment to the festival that we can continue to lay claim to
being one of the biggest - and best - food festivals in Europe.

The Brighton & Hove Food and Drink Festival has
championed the local food economy for well over
a decade, promoting the great produce of our
region and the restaurant scene to both locals
and visitors. Over recent year’s we’ve developed
our International Chef Exchange which has seen
top chefs and producers from our region swap
kitchens with colleagues all over the World,
including as far afield as Vancouver in Canada.
During the Sussex & The World Weekend,
we’re welcoming our friends from Sweden, The
Netherlands, Portugal, the Channel Islands,
India and Italy to join us in our Taste the World
area. Sample authentic cuisine from our partners
including the Nivarata festival of granita in Sicily
who’ll be presenting amazing gelato and sorbets

English Wine Week launches with our two day
festival of wines from Sussex, Kent, Hampshire,
Dorset and further afield. England and Wales are
now one of the most recognised emerging wine
regions in the World with nearly 500 vineyards

here’s something very
decadent about brunch.
Famously quoted in The
Simpsons by Jacques the
flirty French bowler as being “…not
quite breakfast, not quite lunch, but
it comes with a slice of canteloupe
at the end,” it’s the sort of meal I
associate with having a lie in, or a
late night, or a lazy life. I’m not too
sure about the cantaloupe bit but in
my books, having a right old filling
breakfasty sort of a meal that’s later
in the day and could quite possibly
have a cocktail with it sounds a bit
like my idea of heaven.
So imagine my delight when Olivia
Reid at Terre a Terre suggested I
might like to come along and try the
brunch there. What me? At this time
of day? With my reputation? I was
there like a shot.
So – it’s not quite breakfast, it’s
not quite lunch, and it’s not quite
dinner either, but the brunch at
Terre is phenomenal. Honestly, every
time I go there I am consistently
surprised by the quality of the food.
Which sounds like a backhanded
compliment,butyouforget.Andthen
you think, well just how interesting
can vegetables be? And then you eat
there and you are reminded.
I felt it was my business to try a few
things, so I chose a range but be
warned, these are filling dishes.
There’s a bunch of different Rosti
dishes, and I went for the one with
griddled marinated halloumi and a
poached egg on top (£14.98), which

went to test some knockout vegetarian brunch at Brighton’s Terre a Terre…
was piled up on rosti, mushrooms,
beans, and moated with a Bloody
Mary ketchup. A veggie’s answer to
the trashy wonder of the McMuffin is
their Muffin Butty, which is a buttery
toasted muffin filled with a truffled
egg omelette and served with an
allspice molasses ketchup – utterly
delicious (£7.55). But the Run Rarebit
Run Pickle Chips (£8.50) is quite
possibly one of the most indulgent
things I’ve ever eaten – it is literally
handmade chips in a gooey, cheesy
Rarebit sauce, with cheese and
shaved truffle on top, with a poached
egg. It should be illegal.
TaT have done quite a clever thing;
their meal times overlap a bit, so
you never really know which time
of day it is by the menu and I like
that. Brunch officially runs up until
1pm but there’s plenty of the brunch
dishes on the daytime menu, so it
doesn’t really matter. Also, if you act
fast they’ve got a special offer on
for a while, which is free toast and
tea or coffee with every brunch dish
ordered. Not sure how long that will
go on for though so I wouldn’t hang
about.
I recommend you sashay down to
Terre, late morning, and indulge
in some of this sticky, carby
awesomeness. You’ll thank me for
the advice – as they say on their
menu; ‘Heaven is a place on oeuf’.

to the leveeIf there’s anything nicer than settling into a warm pub with an
open fire when it’s freezing cold and blowing a hooley outside,
Sam Harrington-Lowe isn’t sure what it is…

The Dyke might be a big old barn of a
place but there’s something really warm
and cosy about the atmosphere inside.
Score immediate points for feeling
like coming home into the warm after
a really long day at the coal face. It’s
undergone some changes to the team
and the menu recently and we were
keen to check out both the service and
the quality of the food. It’s often a hard
line to tread – the difference between
high end restaurant food, and good
quality pub fare but a glance at the new
menu tells us where we are.
Good reliable standards like gourmet
burgers, sirloin steak and risotto jostle
for position amongst some more daring
dishes such as extensive seafood
platters and slow-cooked ribs. There’s
also a specials board, something I’m
always usually drawn to because I
somehow get the feeling this is where a
chef likes to try out the fun dishes.
And so it was that we found ourselves
going off-piste as much as down the
standard slopes. Starters were (from
the specials) Cream of wild mushroom,
chive and asparagus soup (£5.95)
and from the standard menu, Venison
carpaccio with rocket, Parmesan
shavings and truffle oil (£7.49). And
then from the standard menu, the Cod
with crushed new potatoes, tenderstem
broccoli, savoy cabbage, samphire,
red pepper coulis and lobster butter
sauce (try saying that after a few wines)
at £13.95 and Roast pork belly with
spiced chorizo, crispy wild boar lardon
and haricot bean cassoulet, topped off
with a red onion sour cream (£12.95)
from the specials.
AND HOW WAS IT?
OK, so firstly this is a place that offers
excellent value for money. The portions
are huge. Obviously we tried three
courses (more about pudding later) but
honestly, I wouldn’t normally be able
to eat that much, so pace yourselves.
The food overall has some really
sophisticated touches – really close
attention to detail and some lovely
frivolities like the crispy thing resting on
the soup to the swirls of lobster butter
on the cod plate. The food is all very
well-seasoned – not a place to add salt
– but there is some real creativity on the
menu and we were impressed with the
obvious thought that had gone into the
dishes. The real star of the starters and
main courses we had was actually the
cassoulet – although surprisingly spicy
– it was an indulgent dish of absolute
sticky, beany heaven. The cod was
beautiful cooked, just slippery enough
but set. And we loved the lobster goo
round the edges. Overall, some really
lovely food.
