Milk A1 A2 Classification
1. A1 Milk is from cows with Histidine at 67th position of DNA –Mostly in Holstein
Frisians European Cows.
2. A2 Milk is from original pure breeds of cows that show Proline at 67th position
of DNA & is same as human Milk.Indian, Jersey, Guernsey, Iceland Cows, Yak,
Sheep & Goat milk is reported to be Type A 2
BCM7 in Infant diet
 Blood Brain Barrier is formed in human body after 3 to 4
years age.
 BCM7 in infant milk is associated with Autism. In USA
Mother’s milk is prescribed for infants. In UK most of the
milk is from Jersey cows that is A2 type. Formula Milk is
promoted more by UK .
 BCM7 destroys insulin in infants causing Diabetes type1
 Sudden death Syndrome in infants is also associated with
BCM7
BCM7 in Adults
 In Adults BCM7 leaks in to blood stream
 ( through leaks in human guts) BCM7 has been implicated in very high

देसी गाय और भैंस के दूध की तुलना
 दुध मे सम्पूर्ण प्रोटीन रहने के कारर् यह मनुष्य के लिये आवश्यक है । भैस के दुध कक अपेक्षा गौ
दुध अधधक उत्कृ ष्ट हैं । क्यों कक गौ दुध मे भैस के दुध कक अपेक्षा प्रोटीन कोमि होने के
कारर् सुगमता से पच जाते हैं ।
 गौ दुध मे क्षार भी भैंस के दुध कक अपेक्षा ववशेष धूि जाने व पच जाने वािे रूप मे होते हैं । क्षार
एवं उपयोगी होने के साथ चर्बीवािे प्रोटीन को पचाने मे सहायता करते हैं ।
 प्रोटीन को भी पचाने वािी धचकनाई गाय के दुध मे पयाणप्त होती हैं, इसलिये र्बच्चों तथा रोधगयों के
लिये र प्रौढों के लिये साधारर् रुप से गाय का दुध ववषेश िाभदायक हैं । गौ दुध में पाये जाने वािे
ववटालमन पदाथण ननच्छय ही भैस के दुध कक अपेक्षा उच्च कोटी के होते हैं ।
 भैस कक अपेक्षा गाय के नैसगीक कच्चे दुध में आकसाईड तथा ररजक्टेस पाचक रस कक प्रचूरता
रहेती हैं, जो पाचन में सहायता देने के अनतररक्त दुग्ध पान मे पाये जाने वािे टाववसन्स तथा
टोमेन्स नामक ववषणक पदाथों को दुर करनेवािा एक ननच्छयात्मक तत्व हैं ।
 दुध के अच्छे ककटार्ु भैंस कक अपेक्षा गौदुध में अधधक स्वतंत्रता पुवणक र्बढ़ते हैं । उसका प्रमार् यह
हैं कक गाय के दुध का दही शीघ्र जम जाता हैं ।
 गौ दुध मे रहने वािा के सीन ( Casein) लशघ्र पचाता हैं । इसमे नाना प्रकार के नमक भी पाये जाते
हैं । जजनसे भी पचने मे सुगमता रहती हैं ।
 भैंस के दुध में उष्र्ोत्पादक तत्व अददक मात्रा में रहते हैं, जजससे यह गौ दुग्ध कक अपेक्षा शरीर को
ववशेष गमण कर देता हैं । गौ दुग्ध शीतिता प्रदान करने के साथ-साथ पोषक भी होता हैं । और
मजस्तक से काम करने के लिये इसका मुल्य ववशेष हैं ।
 गाय का दूध सम्पूर्ण भोजन है I
 आयुर्वेद में इसे दूध पपलाने र्वाली माता, पििु और रोपगयों के पलए सर्वणश्रेष्ठ आहार माना गया है I
 Ekkaके दूध के बाद देिी गाय का दूध सर्वणश्रेष्ठ है, जो िपि के साथ पूर्णतया रोगों से भी रक्षा करता है I
 मोटापा नहीं होने देता है, कोलेस्टेराल की मात्रा को संतुपलत रखता है I
 मधुमेह को पनयपरत्रत रखता है और इसमें समापहत िकर मधुमेह के रोपगयों के पलए लाभकारी होती है I
 यह एक श्रेष्ठ नैसपगणक एंटी ओपससडेंट है I
 गाय के दूध में 4.7 प्रनतशत सुपाच्य कार्बोहाइड्रेट, 3.5 प्रनतशत अच्छी ककस्म की
वसा, िगभग 3.5 प्रनतशत श्रेष्ठ ककस्म के प्रोटीन (जजसमें से कु छ फस्टण क्िास
श्रेर्ी के अमीनो अम्ि भी होते हैं), 0.8 प्रनतशत खननज और िवर् तथा शेष भाग
जि का होता है I
देसी गोदुग्ध है पौष्टिक
 गाय के दूध में जो अमीनो एपसड होते हैं, र्वे आसानी से पच जाते हैं, और मानर्व िरीर के सर्वणथा योग्य होते हैं I इसमें से 97% िरीर में
जज्ब हो जाता है
 इसमें 21 तरह के अमीनो एपसड्स, 11 तरह के फे टी एपसड्स, 6 पकस्म के पर्वटापमरस, 25 खपनज, 2 प्रकार की िकर, 4 फास्फोरस,
19 पकस्म के नाइट्रोजन योपगक, कई तरह के एरजाइम्स होते हैं I
 एक पौण्ड गाय का दूध 4 अण्डों और 250 ग्राम मांस के बराबर माना जाता है I
 इसके अनतररक्त कै जल्शयम, फास्फोरस, मैग्नीलशयम, लसलिकान तथा ववटालमन्स ए, र्बी,
सी, डी तथा ई होते हैं I
 कै पससयम बड़ी अंत की कोपिकाओं की कैं सर कारक रसायनों से रक्षा करता है
 गाय के दूध में पयाणप्त पोटेपियम मपस्तष्क के पलए लाभकारी होता है
 100 ग्राम दूध में 0.93 ग्राम फास्फोरस, 1.20 ग्राम कै पसियम, 0.002 ग्राम लौह तत्र्व तथा र्वेनेपडयम, क्रोपमयम, अभ्रक, और
िीिा होता है I
 इसमें लगभग 25 तरह के खपनज होते हैं, इनमें आयोडीन भी िापमल है, जो िपि के साथ ही िरीर में ठण्डक के पलए जार्वाब्देह है I
मापसक धमण के कष्टों से रक्षा करता है I
देसी गोदुग्ध है पौष्टिक
अतुलनीय
 अमेररका की कॉनेि यूननवलसणटी के डॉ.डेि र्बाउमेन (Dale E. Bauman) ने गाय के
दूध तथा मूत्र में कैं सररोधक यौधगक सी.एि.ए. की उपजस्थनत का आकिन कर गौ
दुग्ध और मूत्र को कैं सररोधक ननरूवपत ककया है I
 गाय के धारोष्र् दूध (गाय को दुहते ही जो दूध थानों से ननकिता है) सवणश्रेष्ठ
होता है आयुवेद में लिखा है कक धारोटणममृतोपमम ् अथाणत् धारोष्र् दूध अमृत के
समान होता है I
 अमेररका की पेनलसल्वाननया स्टेट यूननवलसणटी के प्रोफे सर फे टेररको हाटण ने र्बताया,
'यह भौनतक-रासायननक गुर् लशशुओं की व्यवस्था को चुनौती देते हैं.
 इस समस्या को सुिझाने के लिए हाटण ने गाय के दूध में पाए जाने वािे एक
प्रोटीन समूह 'के लसंस' पर इस्तेमाि करके देखा. स्तनपाइयों के दूध में पाए जाने
वािे के लसंस प्रोटीन, मां से र्बच्चे में एलमनो एलसड और कै जल्शयम ववतरर् की
प्राकृ नतक व्यवस्था है. हाटण ने सोचा कक यह ररटोनावीर दवा के अर्ुओं को भी
ववतररत कर सकते हैं.

  • 21. देसी गाय और भैंस के दूध की तुलना  दुध मे सम्पूर्ण प्रोटीन रहने के कारर् यह मनुष्य के लिये आवश्यक है । भैस के दुध कक अपेक्षा गौ दुध अधधक उत्कृ ष्ट हैं । क्यों कक गौ दुध मे भैस के दुध कक अपेक्षा प्रोटीन कोमि होने के कारर् सुगमता से पच जाते हैं ।  गौ दुध मे क्षार भी भैंस के दुध कक अपेक्षा ववशेष धूि जाने व पच जाने वािे रूप मे होते हैं । क्षार एवं उपयोगी होने के साथ चर्बीवािे प्रोटीन को पचाने मे सहायता करते हैं ।  प्रोटीन को भी पचाने वािी धचकनाई गाय के दुध मे पयाणप्त होती हैं, इसलिये र्बच्चों तथा रोधगयों के लिये र प्रौढों के लिये साधारर् रुप से गाय का दुध ववषेश िाभदायक हैं । गौ दुध में पाये जाने वािे ववटालमन पदाथण ननच्छय ही भैस के दुध कक अपेक्षा उच्च कोटी के होते हैं ।  भैस कक अपेक्षा गाय के नैसगीक कच्चे दुध में आकसाईड तथा ररजक्टेस पाचक रस कक प्रचूरता रहेती हैं, जो पाचन में सहायता देने के अनतररक्त दुग्ध पान मे पाये जाने वािे टाववसन्स तथा टोमेन्स नामक ववषणक पदाथों को दुर करनेवािा एक ननच्छयात्मक तत्व हैं ।  दुध के अच्छे ककटार्ु भैंस कक अपेक्षा गौदुध में अधधक स्वतंत्रता पुवणक र्बढ़ते हैं । उसका प्रमार् यह हैं कक गाय के दुध का दही शीघ्र जम जाता हैं ।  गौ दुध मे रहने वािा के सीन ( Casein) लशघ्र पचाता हैं । इसमे नाना प्रकार के नमक भी पाये जाते हैं । जजनसे भी पचने मे सुगमता रहती हैं ।  भैंस के दुध में उष्र्ोत्पादक तत्व अददक मात्रा में रहते हैं, जजससे यह गौ दुग्ध कक अपेक्षा शरीर को ववशेष गमण कर देता हैं । गौ दुग्ध शीतिता प्रदान करने के साथ-साथ पोषक भी होता हैं । और मजस्तक से काम करने के लिये इसका मुल्य ववशेष हैं ।
  • 22.  गाय का दूध सम्पूर्ण भोजन है I  आयुर्वेद में इसे दूध पपलाने र्वाली माता, पििु और रोपगयों के पलए सर्वणश्रेष्ठ आहार माना गया है I  Ekkaके दूध के बाद देिी गाय का दूध सर्वणश्रेष्ठ है, जो िपि के साथ पूर्णतया रोगों से भी रक्षा करता है I  मोटापा नहीं होने देता है, कोलेस्टेराल की मात्रा को संतुपलत रखता है I  मधुमेह को पनयपरत्रत रखता है और इसमें समापहत िकर मधुमेह के रोपगयों के पलए लाभकारी होती है I  यह एक श्रेष्ठ नैसपगणक एंटी ओपससडेंट है I  गाय के दूध में 4.7 प्रनतशत सुपाच्य कार्बोहाइड्रेट, 3.5 प्रनतशत अच्छी ककस्म की वसा, िगभग 3.5 प्रनतशत श्रेष्ठ ककस्म के प्रोटीन (जजसमें से कु छ फस्टण क्िास श्रेर्ी के अमीनो अम्ि भी होते हैं), 0.8 प्रनतशत खननज और िवर् तथा शेष भाग जि का होता है I देसी गोदुग्ध है पौष्टिक

Bauman) ने गाय के दूध तथा मूत्र में कैं सररोधक यौधगक सी.एि.ए. की उपजस्थनत का आकिन कर गौ दुग्ध और मूत्र को कैं सररोधक ननरूवपत ककया है I  गाय के धारोष्र् दूध (गाय को दुहते ही जो दूध थानों से ननकिता है) सवणश्रेष्ठ होता है आयुवेद में लिखा है कक धारोटणममृतोपमम ् अथाणत् धारोष्र् दूध अमृत के समान होता है I  अमेररका की पेनलसल्वाननया स्टेट यूननवलसणटी के प्रोफे सर फे टेररको हाटण ने र्बताया, 'यह भौनतक-रासायननक गुर् लशशुओं की व्यवस्था को चुनौती देते हैं.  इस समस्या को सुिझाने के लिए हाटण ने गाय के दूध में पाए जाने वािे एक प्रोटीन समूह 'के लसंस' पर इस्तेमाि करके देखा. स्तनपाइयों के दूध में पाए जाने वािे के लसंस प्रोटीन, मां से र्बच्चे में एलमनो एलसड और कै जल्शयम ववतरर् की प्राकृ नतक व्यवस्था है. हाटण ने सोचा कक यह ररटोनावीर दवा के अर्ुओं को भी ववतररत कर सकते हैं.
