youngsters. A project thought by a group of professionals, in which we
have expressed our experiences related with the world of the wine.

The land of Viña Ruda is familiar place, although in 2006 began the
construction of a cellar that it occupies 7.000 m2.
Around the cellar, find a vineyard managed of innovative and creative
form. Like this it is like Viña Ruda surfaces like a pioneering cellar in the
Spanish Market.
His set up has supposed the birth of a cool and brave project, challenging
the established. An at all casual election but rather a bet decided for
launching to the markets different wines.

Viña Ruda is a young cellar, free and natural that elaborates the best
possible wine and puts it near at hand of the youngsters.
This wine arises from an own prime matter excellent and the just
combination between the traditional methods and the most advanced
technology.
In his approach has treated , besides, to keep to the maximum the
respect to the environment, so much in the vineyard as in the cellar.
Viña Ruda has 15 hectares of terrain. The majority are planted with the
varieties Tempranillo, Syrah and Airén.

ENOLOGY OF THE 21st CENTURY, NEW TECHNICAL
The installations of Viña Ruda are composed of the zones of
ellaboration, crianza and bottle more advanced of our zone of
production. A perfect conjunction between the traditional methods and
the enology of the 21st century.
But to technological level, no only stand out by the technician,
but also by the thought, thus we are the cellar leader in
elaborating our wines under the technician of “infusion”.
By this technician have highly aromatic, delicate to the palate and deeply
wines.

Variety: Airén Vintage: 2014 Alcohol: 11,00% Vol
Winemaking
The cold maceration, bring to the must Airen the traditionally hidden from aromatic
variety. These aromas are preserved in an extreme fermentation at 11 °C, and
powered by an original yeast.
Tasting Notes
Clear and bright yellow. On the nose is very elegant and intense aroma of white and
tropical fruit. Fresh, silky and long on the palate.
Food Pairing
Recommended with all kinds of seafood. Serving temperature varies between 6 º C
and 8 º C.

Winemaking
Grape must introduced in new French oak barrels. Aging for 4 months in contact
with ne lees which are periodically removed to facilitate oxygenation of wine
"battonage".
Tasting Notes
Bright pale yellow color. On the nose, delicate and spicy roasted avors
predominate. High aromatic intensity, with the presence of white fruit and oral
notes. The palate is warm and structured, with an elegant and lingering nish.
Food Pairing
Particularly suitable to accompany all kinds of sh, shellsh, pates and cured cheeses.
Serving temperature varies between 8 º C and 10 º C.

Variety: Tempranillo Vintage: 2013 Alcohol: 13,00% Vol
Winemaking
Vinification system developed by Viña Ruda, after three years of research. Is a very
effective extraction. The grape juice goes through a column in which the skins are
encapsulated. Then we proceed to a fermentation at low temperature.
Tasting Notes
Bright red cherry, shows a high aromatic intensity, presence of red fruits. Its
passage in the mouth is nice and warm.
Food Pairing
Recommended with all kinds of rice, meat and cheese. Serving temperature
between 14 º C and 16 º C.

Variety: Tempranillo Vintage: 2014 Alcohol: 13,00% Vol
Winemaking
The Tempranillo grapes used in this wine come from 10-20 yearold vines. After
being hand-harvested and undergoing cluster selection in the vineyards, the
grapes are destemmed and go through gravity-controlled tanks, with ve to six days
cold skin maceration prior to fermentation. An additional two months of
maturation follow, with malolatic fermentation taking place. The wine is aged for
four months in new oak barrels (85-percent American and 15-percent French oak).
It then sees an additional four months of ageing in the bottle before leaving the
cellar.
Tasting Notes
Has a dark red color with blue reections, conrming the wine’s youth; an intense
robe for a bright wine. The nose displays full red-fruit aromas, including cherries
and strawberries, and is reminiscent of black licorice and ripe blackberries,
integrated with elegant, clean oak notes. There is a strong, balanced mouth feel,
showing good structure and a rounded wine, with hints of berries on the palate and
a persistent, lingering nish.
Food Pairing
This wine is ideally served at room temperature to accompany pork and beef, as
well as rice and vegetables dishes and various semi-soft cheeses. Serving
temperature between 14 º C and 16 º C.

Variety: Tempranillo + Syrah Vintage: 2012 Alcohol: 13,50% Vol
Winemaking
Controlled fermentation followed by aging for 6 months in new French and
American oak. Control of temperature and humidity throughout the process. The
end from a laborious exercise "blending" continued stay in botlle 12 months.
Tasting Notes
Elegant bright red. The nose has a rich aromatic expression in nuances, combining
the aromas of the fruit. On the palate, good entry, well structured, tasty with nerve
ending in an elegant aftertaste.
Food Pairing
Particularly suitable to accompany stews, aged cheeses, meats and game. Serving
temperature between 14 º C and 16 º C.

Variety: Syrah Vintage: 2012 Alcohol: 13,50% Vol
Winemaking
Harvested in mid of September 2012 when the skin have reached maturity. De-
stemmed and then placed in stainless steel containers for fermentation using
selected yeasts. The maturing process is around approximately 12 months in oaks
and then in bottles during 6 months.
Tasting Notes
A black cherry colour with a violet edge. Clean and brilliant. On the nose: Complex
aromas like dark fruity, raspberries and violets combined with spices and hints of
smoked and mint. In the mouth: powerfully eshy with a ripened structure.
Food Pairing
Particularly suitable for Mediterranean food. Its ideal serving temperature is
between 12 ° C and 14 ° C.
