When ionic compounds dissolve in water, they break down into their constituent ions. Water is able to dissolve ionic compounds because it is a polar solvent. The solubility of a substance depends on temperature - solids generally become more soluble as temperature increases while gases become less soluble. A saturated solution contains as much solute as can dissolve at a given temperature, while an unsaturated solution contains less and a supersaturated solution contains more.
