3. BASIC SPAGHETTI SAUCE
Yield: 3 servings
1 tablespoons Olive Oil
2 Onions chopped
4 Crushed garlic cloves or
2 Minced garlic
14 oz Can Tomato sauce
1/2 cup Red wine (optional)
1 Sweet green pepper
1 teaspoon Dried leaf basil
1/2 teaspoon Leaf oregano
Heat oil in a large saucpan set over medium heat. Add onions and garlic.
Saute for 2 min. Add remaining ingredients. Cover and bring to a boil,
stirring often.
Then, reduce heat and simmer, stirring often for at least 5 min.

4. HOT SPAGHETTI SAUCE
Yield: 3 servings
1 lb Ground chicken, or
1 lb Turkey
1 tablespoon Olive Oil
2 Onions chopped
4 Crushed garlic cloves or
14 oz Can Tomato sauce
1/2 cup White wine (optional)
1 Sweet green pepper
1 teaspoon Dried leaf basil
1/2 teaspoon Leaf Sage
Heat oil in a large saucpan set over medium heat. Add ground chicken or turkey to pan along with
onions. Stir frequently with a fork until meat loses most of its pink color.
Add Tomato sauce and white wine. Simmer or 5 minutes.
Add remaining ingredients. Saute for 2 minutes. Cover and bring to a boil, stirring often. Then,
reduce heat and simmer, stirring often for at least 5 min.

5. BEEF SPAGHETTI SAUCE

6. TURKEY SPAGHETTI SAUCE

1/4 cup Chopped onion
1 Garlic clove, minced
1 teaspoon Olive oil
28 oz Can tomatoes, cut up
6 oz Can tomato paste
1 teaspoon Dried basil
1 teaspoon Dried thyme
3 cup Chopped cooked turkey
Cooked noodles or macaroni
Saute the onion and garlic in the oil until lightly browned. Add the tomatoes, tomato paste, basil,
thyme and turkey.
Simmer for 20 to 25 minutes while cooking the noodles or macaroni.

8. VEGETARIAN SPAGHETTI SAUCE
Yield: 8 servings
4 x Carrots, finely chopped
Large onion, finely chopped
1 tablespoon Olive oil
2 x Cloves garlic, finely minced
1 can Kidney beans (19 oz.)
1 can Cannellini beans (19 oz.)
1 tablespoon Leaf basil, crumbled
1 tablespoon Leaf oregano, crumbled
1 can Tomatoes in juice (28 oz)
1/4 cup Tomato paste
1/4 lb Fresh mushrooms, sliced
1 pk (10 oz) broccoli, thawed
1/4 teaspoon Pepper
Saute carrot and onion in oil in large non-stick saucepan till softened, 5 minutes; add 1 to 2
tablespoons water if sticking.
Add garlic; saute 30 seconds. Add drained and rinsed beans, basil, oregano, tomatoes (broken up),
tomato paste and mushrooms; simmer, covered 25 minutes to mingle flavors.
Add broccoli; cook 5 minutes. Add pepper.

9. QUICK SPAGHETTI SAUCE
Yield: 4 servings
1/2 lb Ground Beef; Lean
24 oz Tomato Sauce; 3 cn
1/2 cup Water
2 oz Mushrooms;Sliced,Drained,1cn
2 tb Minced Onion Flakes
1 1/2 teaspoon Brown Sugar; Packed
3/4 teaspoon Oregano
1/2 teaspoon Basil
1/2 teaspoon Garlic Salt
1/8 teaspoon Marjoram
Saute the ground beef in a skillet and drain off the excess fat. Add the remaining ingredients and
heat to boiling.
Simmer for 10 minutes, stirring occasionally. Serve over hot cooked spaghetti or other pasta.

10. HEARTY SPAGHETTI SAUCE
Yield: 1 servings
3 teaspoon Olive or other vegetable oil
3 cups Garlic, finely chopped
2 Onions, finely chopped
2 Celery
2 Carrots, finely chopped
1 1/2 lb Ground beef
1 cup Milk
2 cups Tomatoes with juice
1/4 teaspoon Chili peppers, dried, hot re
1/2 teaspoon Basil, dried
1/2 teaspoon Oregano, dried
1 teaspoon Parsley, fresh or
1 teaspoon Parsely, dried
1 teaspoon Salt, or more to taste
1/4 teaspoon Pepper
Heat oil in a deep large skillet or dutch oven. Add garlic, onions, celery and
carrots. Cook until vegetables are tender. (about 8 minutes). Add meat and
brown, discard excess fat, if any. Add milk, cook covered 20 minutes over
medium low heat. Break up tomatoes. Add to meat mixture with juices. Add
remaining ingedients. Cook uncovered 1 hour.
Taste and add seasoning if necessary.

11. NEOPOLITAN SPAGHETTI SAUCE
Yield: 6 servings
2 Onions; sliced thin
2 Garlic cloves; mashed
1/2 cup Olive oil
1 1/2 lb Ground beef
2 1/2 cup Tomato juice
1 1/2 cup Tomato puree
1 can Tomato paste; italian
4 Chili peppers
1 teaspoon Salt
1/4 teaspoon Pepper
1 teaspoon Sugar
12 green olives; stuffed, sliced
Brown onions and garlic in oil. Add meat and brown slowly. Heat tomato
juice, puree and paste in a deep kettle; add meat mixture, chili peppers;
salt, pepper and sugar.
Simmer 2-1/2 to 3 hours, until thick. Remove chili peppers and add olives.
Simmer 10 minute longer.
Serve with spaghetti, topped with grated Parmesan cheese.
