Gorgonzola and Argula salad, Chablis poached pears with red wine vinaigrette.
From Whole baked baby snapper, orange and fennel compote, sprouting broccoli
with hollandaise to Prawn pappardelle, shrimp crème fraiche in parmesan cone.
And from Confit of Guinea fowl, stilton and onion quiche and balsamic crème to
Ballotine of spring chicken, tomato compote, fondant potato with morel and
Marsala sauce.
