1. Silesian cuisine
Has a long tradition
which dates back to
the 12th and 13
Century when Silesia,
which now belongs to
Poland, was inhabited
by other people, all of
whom brought their
dishes and recipes
with them.
3. Over time…
The culinary traditions of various immigrants
fused with the traditions of the Slavic’s.
Silesia was for many years a part of Bohemia
and the Empire of Austria, which explains why
people like pastries and desserts.
5. German-Silesians
fled the country &
took traditional
Silesian cuisine
with them. Silesian
cuisine is now kept
alive by the older
generation.
After the 2nd World War…
6. As a result…
Some dishes like
"Himmelreich” –
"Kingdom of heavens"
- smoked pork belly
pork with dried fruit
and potato dumplings
are rarely cooked
anymore.
7. Main ingredients include…
Potatoes, red and white cabbage and beetroot.
The rivers in Silesia also provide carp and trout.
On the meat-side, pork is preferred over beef.
Silesian cuisine is very tasty but uses a lot of fat.
It has more calories than usual.
8. Zurek
Silesia is probably the
homeland of Zurek.
There are two kinds.
One is Lenten, cooked
in vegetable broth with
potato and dried
mushrooms, and the
other has a lot of ham,
white sausages, carrots
and sour cream.
9. Kluski slaskie - Silesian dumplings
Are made from
potatoes and potato
flour. Usually Silesian
dumplings are eaten as
an addition to meat
dishes, usually sauces
(e.g. goulash) or salads.
10. Sunday – main course
This consists of broth (rosol) with noodles
(makaron) and tiny liver dumplings (kluseczki z
watroby), czorne kluski (round shaped
dumplings made from boiled, grated and
mashed potatoes), modro kapusta (cooked red
cabbage) and rolada (beaf roll stuffed with
bacon, pickled cucumber and mustard).
11. Sunday dessert
A piece of yeast cake
with cottage cheese
(kolocz z serem) or
poppy seeds (kolocz
z makiem).
13. Krupniok (a kind of
sausage made of
kasha and pork blood;
blood sausage)
Zymloki (specially
treated bread rolls
with pork blood;
similar to ’’Krupniok'')
14. Streusel cake Poppy seed cake
Wodzionka or broltzupa
(soup made from bread
seasoned with lots of garlic)
