1. SHRIMP SKEWERS WITH TREE TOMATO BBQ SAUCE
500 grams raw shrimp
bamboo skewers, soaked
salt & pepper to taste
grapeseed or canola oil, for searing
For the Tree Tomato BBQ Sauce:
400 grams tree tomato, peeled and quartered
350 ml. pork or chicken broth
90 ml. soy sauce
15 ml. mirin
25 ml. fish sauce
90 grams ground panela or brown sugar
75 ml. tomato ketchup
2. Instructions:
1. Season the shrimp with salt and pepper and assemble the skewers
3. 2. Placing 4 to 6 shrimp (depending on size) on each skewer, piercing the
head and the tail of each shrimp.
3. To make the tree tomate bbq sauce, place all the ingredients, except for
the brown sugar, into a blender and process for 2 minutes on medium
speed.
4. 4. Pour the sauce directly into a medium saucepan and cook over high heat
until it boils. Add the brown sugar (or panela) and stir to dissolve. Reduce
the heat to low and let the sauce cook for 15 to 20 minutes.
5. Strain the sauce and discard the seeds from the tree tomato.
5. 6. To cook the skewers, heat a heavy bottom frying pan on high heat until
hot; sear the shrimp skewers with the oil for one minute on each side.
7. When searing the second side, brush the shrimp with the bbq sauce.
Serve the shrimp skewers with additional bbq sauce on the side.
6. 8. The skewers can also be cooked on the bbq grill or plancha.
