Strawberry Blancmange

Keep your little octopuses happy with this very easy but startlingly dangerous (see above) recipe for
Blancmange. It takes roughly ten minutes to prepare the ingredients but must then be left to cool
before being placed in the fridge for at least two hours. The quantities below feed roughly six but
that does depend how greedy those people are.
What you need
Ingredients Equipment
(75 g) 3 oz cornflour A pan
700 ml (1 1/4 pint) milk A measuring jug
1 1/4 cup (1/2 pint) Strawberry Jam Spoons to stir with
approx 14oz Scales
You can also add a squirt of almond A Jelly mould (2 pints)
essence if you like that sort of thing. A bowl
Making
1. Blend the cornflour to a smooth paste with a little of the cold milk in a bowl. Add to this the Jam.

2. 2. Bring the remaining milk to the boil in a pan.
Meanwhile
3. Pour the boiling milk on to the cornflour mixture, stirring all the time. If you stop it goes all gloopy.
4. Pour the mixture back into the saucepan and heat it gently. Stir all the time until the mixture
becomes really thick and simmers. At this point the mixture becomes extremely sticky and
dangerous so beware!
5. Allow to simmer for 5 roughly minutes, stirring occasionally. It becomes really thick like glue (but
obviously yummier – I strongly advise you not to taste this mixture as you will melt your tongue off).
6. Add almond essence if you want to, stir well, then pour the blancmange into a jelly mould. Again
this is obscenely dangerous so be careful!

3. 7. Leave the blancmange to cool.
8. Chill the cooled blancmange for at least 2 hours, or until set.
9. Unmould the blancmange just before serving.
10. Feed to a hungry little octopus!
