What we have here is the recipe for a little lemon cake with zingy goo inside! Why on earth would
you want one of those? Well, I found I wanted to make (and eat) lemon cake but real recipes are all
designed to feed the five thousand. You can’t just have the one slice as they don’t usually last more
than a day or two. So the solution is here!
When I made this I used a small cake tin (readily available from cookery shops and all the usually
supermarkety places if you prefer). You can use a big one but obviously the shape will be different to
the one in the pictures. I measured the ingredients using a tablespoon, that’s the big one you eat
cereal with. It keeps it a little informal, which is a nice way of saying FUN!

4 Tablespoons icing sugar
A Tablespoon to Measure With
1 Egg
A Spatula
3 Tablespoons milk
A Bowl
3 Tablespoons oil
A Small Cake Tin
Making A Cooling Rack
Gooey Filling
A Pan
1 small egg
A Bread Knife
2 Tablespoons of Caster Sugar
A Sieve
1 Tablespoon of Butter
½ Tablespoon of Cornflour
A lemon

The Cake
1. Firstly, preheat oven to 1500C
2. Using the Table Spoon measure out the correct amounts of icing sugar and self-raising flour
and put them in a bowl.
3. Stir until all are combined together. Then add the egg. Stir a bit more
4. Add the milk and the oil. Then stir again until everything is mixed together
5. Grease your cake tin. Then pour the mixture in!

6. The oven should be at 1500C. Put the cake in and allow to cook for roughly 10-15 mins.
7. To check if the cake is ready stab it with a knife. If the knife comes out clean it’s ready. If it’s
gooey, it’s not . Once ready take the cake out of the oven (using oven gloves) and leave on a wire
rack to cool. Then remove it from the tin. Once cook cut in half ready for the filling!
The Gooey Filling

2. Cut the lemon in half using a serrated (spiky) knife.
3.Squeeze the lemon into a bowl. Do this through a sieve to catch all the gungy bits. You can throw
those away as we won’t be needing them.
4.Using your Tablespoon, measure the butter, cornflour and sugar into the bowl. Mix. Then add the
egg.
5.Pour the mixture into a pan. Non-stick pans are best. Put the pan over the hob and switch on.
Using a whisk stir the mixture.

6.The mixture should start to thicken. When its thick like custard (use your judgement here) remove
from the heat. Then quickly (but not dangerously quickly) move on to step 7.

7. Now for the extra messy bit. Before the gooey mixture cools pour it onto the cake base. It will go
everywhere.
8. Then pop the top of the cake back on and Ta-da! I wouldn’t press down too hard or the filling will
go even further!
