3. Paella
Ingredients
1 small onion, finely chopped
1 green pepper, finely chopped
½ red pepper, boiled until soft and then cut into long
thin strips
2 medium-sized tomatoes, skinned and finely chopped
200g prawns
200g small clams
200g squid
12 mussels
350g rice
2 cloves of garlic, coarsely chopped
a pinch of saffron strands
a sprig of parsley, finely chopped
olive oil
about 800ml water
Steps:
1-Heat some olive oil in a large frying pan. Add the onion, green pepper, and squid and fry
gently for about five
2- Add the rice and stir well to make sure that it is thoroughly cooked and add water and the
differents tipes of fish and add salt
3- Then add the mussels on the top and put more water.
4- Once the rice is cooked and the mussels have opened, it is ready to eat.
4. Potato salad
Ingredients:
10 unpeeled red potatoes
5 hard boiled eggs, roughly chopped
3/4 cup sour cream
3/4 cup mayonnaise
1 tablespoon apple cider vinegar, or to taste
1 tablespoon Dijon mustard, or to taste
1/2 white onion, finely chopped
1 stalk celery, finely chopped
1 teaspoon celery salt
salt and black pepper to taste
1 tablespoon dried dill weed
Steps:
In a bowl, whisk the mayonnaise, celery, onion, pimientos, vinegar, mustard, salt and pepper
until smooth. Add potatoes and bacon; stir to coat. Refrigerate until serving.
5. Chicken soup
Ingredients:
3 part of chicken
1 tablespoon salt
½ onion
1 tomato
1 carrot
other soup greens based on preference
6 peppercorns
3 grains allspice
1 bay leaf
parsley for garnishing
Steps:
Wash 1 cut-up 3 chicken, place in pot, add 1 T salt and 2-1/2 - 3 quarts water, bring to gentle boil
and cook 90 min or until meat is fairly tender. (Cook only 45 min if a fryer is being used).
Skim off scum until no more forms. To broth add 1 portion soup greens and 1 halved onion (impaled
on fork and charred over flame), 1 whole tomato, 1 whole carrot, 6 peppercorns, 2-3 grains allspice
and 1 bay leaf.
Cook until vegetables are tender. Strain, discard all spices and serve. Vegetables may be used in
some other dish, but the carrots may be diced and served in the soup.
6. Snails on a tin
Ingredients:
80-100 snails
Oil
Salt- a piece of salt
Brandy
Steps:
Snails are placed in a tin with oil.
First put salt generously and then place the tin on the grill about 25
minutes or until you try to remove a snail easily.
7. Herring fish salad
Ingredients:
1/2 kg potatoes
1 apple
1/2 onion
4-5 pickled herring fillets
1/2 cup sour cream
1/2 cup normal cream
6-7 medium sized gherkins (German, Polish or Russian
variety)
olive oil
1/2 lemon
parsley
salt and pepper
Steps:boil the potatoes
peel them and leave to cool
cut the herring fillets into 2 cm strips
chop up the gherkins and the onion finely
peel the apple and cut it into 2 cm cubes
cut the potatoes into cubes
put everything into a bowl
add the juice of half a lemon and the sour and normal cream
season with very little salt as the herrings a pretty salty already and pepper to
taste
add some fresh parsley and move everything carefully
8. BigosIngredients:
8 slices of bacon, finely chopped
1 pound boneless, lean pork shoulder
3 cloves garlic, finely chopped, or 1 teaspoon garlic powder
3 onions, quartered
½ pound fresh mushrooms, sliced
1 cup canned beef broth
2 Tablespoons sugar
2 bay leaves
2 cups canned sauerkaut , rinsed under water and drained well
2 medium apples, cored and sliced
2cups Italian's tyle whole tomatoes with juice
1 cup cooked ham, diced
1½ cups cooked Polish sausage, coarsely sliced
Steps:
Fry bacon pieces in Dutch oven or large saucepan over high heat for about 3 minutes.
Carefully drain off some of the fat, leaving just enough to coat the bottom of the pot.
Add pork, garlic, onions, and mushrooms, and, stirring constantly, fry until meat is browned on all sides,
about 5 minutes.
Reduce heat to medium. Add beef broth, sugar, bay leaves, drained sauerkraut, apples, and tomatoes
with juice. Bring the mixutre to a boil, increasing heat if necessary.
Reduce heat, cover, and simmer stew for about 1½ hours, stirring occasionally to prevent sticking.
Add cooked ham and sausage, and stir.
Cover and continue to simmer over low heat for about 30 minutes more to blend flavors.
Remove bay leaves and discard before serving.
9. Catalan cream
Ingredients (4 people)
1 liter of milk
4 egg yolks
2 tablespoons cornstarch
200 gr. sugar
Steps:
Step 1: Heat the milk.
Step 2: Beat the egg yolks with sugar and cornstarch.
Step 3: Pour the milk over the yolks.
Step 4: Place the mixture into the fire, without boiling, until thickened.
Step 5: Distribute it in clay pots and let cool. Put a layer of sugar and burn with a shovel (which is red
in the fire.)
10. German plum tart
Ingredients:
4 cups sliced fresh plums
1/2 cup sugar
1/4 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1 tablespoon lemon juice
1 (9 inch) unbaked deep dish pastry shell TOPPING
1/2 cup sugar
1/2 cup all-purpose flour
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
3 tablespoons cold butter or margarine
Steps:
Preheat oven to 375 degrees F (190 degrees C). Grease and flour one 9 inch tube pan.
Separate the eggs. In a small bowl, beat the egg whites until stiff peaks form, and set aside.
In a large bowl, cream the butter or margarine with the sugar. Beat in the egg yolks and the
lemon zest.
Stir together the flour and baking powder and then beat the flour mixture into the creamed
mixture. Gently fold in the egg whites. Spread the batter evenly into the prepared pan. There will
only be a little over an inch of batter. Arrange the plums, skin side down, attractively over the
batter.
Bake at 375 degrees F (175 degrees C) for 40 minutes or until cake tests done. Transfer to a
cooling rack and allow to cool before serving. Makes 6 servings.
11. Szarlotka
Ingredients:
2 eggs
2 tablespoons flax seed meal
1/2 cup oil
2 cups flour
1/2 cup oats
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon almond extract
Steps:
Wash and coarsely chop the apples , place in a large bowl and sprinkle with
sugar
Some lemon juice may be poured on top of apples also.
Set Aside Preheat oven to 350°F
Mix the flour, oats, baking soda and baking powder in a medium bowl.
In a separate bowl mix the eggs, flax meal, and oil, and extract together.
Add this mixture to the flour mixture. Mix well
Add this dough to the apples, along with the nuts and raisins. Mix very well.
The apples will get incorporated into the dough.
Add a bit more flour if the mixture is extremely wet
Put into a large pan and smooth out the top so it flat.
Bake for around 1 hour .
Top should look fairly browned.
Take out of the oven and Cool in the pan.
13. “Panellets”
