15. 1. Proof the yeast.
1 package
active dry yeast
¼ cup
lukewarm water
1 Tablespoon
all-purpose flour
1 Tablespoon
granulated sugar
(~5 min)
not necessary, but certainly fun to watch
16. 2. Make first batter.
1 ½ cups flour*
yeast mixture
1 large egg, size x 2
beaten
(~1 hour)
⅓ cup lukewarm
milk
* minus the previous 1T
…and let it rise in a warm place.
17. 3. Make second batter.
9T butter
½ cup flour
1 teaspoon
vanilla extract
½ teaspoon
baking powder
½ teaspoon
cinnamon*
* theoretically optional
1T sugar
pinch of salt
it should have a paste-like consistency
18. 4. Mix the two by hand.

crushed sugar cubes
shape into 8–12 balls and let rise 30 min.
