The Chick-un Salad Sandwich at Garden Truck
One of my favorite things to do these days is switch up what I’m eating. It’s easy to get into a habit of chicken
wings, fish tacos and barbecue, since they’re all so easily accessible in Jacksonville.This week, I heard about a
restaurant that is a little different, and I couldn’t wait to give it a try. This trip took me to the north side of
Jacksonville to an all-vegan restaurant, Garden Truck Eatery and Juice Bar.
Located a little off the beaten path off I-295 South at Exit 40, Garden Truck is a simple, hip-looking restaurant
with a strong local feel. Sandwiches and paninis, salads, hot bowls and sides make up the lunch and dinner
menu. Since it is a vegan restaurant, Garden Truck takes some classics and puts their vegan spin on them. The
Buffalo Chick-un Wrap, “Sausage and Peppers,” and the Smoked Tempeh, Lettuce and Tomato Sandwich are
just a few examples. There are four salads to choose from, daily soup specials and sides such as the Red Bliss
Potato Salad.
The drink menu at Garden Truck is full of smoothies, juices, coconut water and more. The Vegan Elvis, Clean
Green and Berry Blast all sound good. Juices such as the Mean Green, Kiwi Cooler and Apple Root are
available, and you can even build your own. For the health nut that loves to try new things, this menu is right up
your alley.
The Garden Truck Chick-un Salad Sandwich was my choice, along with a side of Green Cabbage and Granny
Smith Apple Slaw. The sandwich is made with chick-un strips (meat substitute) blackened and tossed with
mayonnaise, grapes and walnuts mixed with fresh herbs and Himalayan pink sea salt with lettuce and tomato on
multi-grain bread. This is an amazing sandwich, and the slaw was delicious as well. It’s the perfect light lunch.
Fresh ingredients, great flavor, and my total cost was less than $8.
Garden Truck doesn’t have to be just for vegans, it’s for people who enjoy tasty food. Will I scarf down a plate
of wings at Carmine’s or a T-Rex pizza at Moon River? You betcha, but there’s always room for variety. As
long as it’s good, I’m in. Get out of your comfort zone and try Garden Truck today, you may find yourself
thinking about being a vegan…hey, it could happen.
