What You Need:
9 ounces linguine
7 ounces pesto sauce
5 cups fresh spinach leaves, shredded
1 cup fresh tomato, chopped
1 cup red onion, thinly sliced
1/4 cup pine nuts, toasted
3 Tablespoons lemon juice
1/4 teaspoon salt
How to Make It:
Cook the linguine according to directions on the package.
Rinse in cold water and drain.
Mix the pasta, spinach, tomato, onion and pine nuts in a salad
bowl.
Mix the pesto sauce, lemon juice, and salt in a small bowl. Add the dressing to the pasta mixture. Toss well to
coat thoroughly. Serve immediately or chill until needed.
