you to discover how simple and delicious seafood can be.

Try... Roughly chopping and seasoning a couple
of courgettes and a handful of small potatoes.
Drizzle with olive oil and roast on a baking tray for
20 mins in a preheated oven 200C/GM6.
In the meantime lightly oil two pieces of tinfoil and
then on them place a couple of cod fillets scattered
with a handful of pine nuts, a drizzle of olive oil, salt,
pepper and some freshly chopped basil.
Fold the foil into a parcel and place on the same
baking tray as the other ingredients and cook for
a further 20 mins until the fish flakes in the centre
and the vegetables are golden brown.
Remove the fish from the parcels (be careful as
the steam and juices will be very hot) and place in a
