2. I am not Chef______________
10. I am not your previous Chef. The Chef(s) you
have had previously were all very good.
I may have a different way of doing things. Learn
from and embrace that. This what you will find in
the industry so focus on this industry experience
while in school
Remember there is more than one
way to get from Boulder to
Denver
3. Be on time
9. We start promptly at are scheduled time
In this industry if you are on time you are late on
time.
Most industry Chef’s will judge your level of
competence and commitment based on your
timeliness

7. In the classroom
5. Lecture
Take notes, you will need them, ask questions,
think for a minute before asking your question,
the information may be coming, listen to the
questions being asked
All your presentations are on the portal, I strongly
encourage you download them a annotate on
those presentations
I can’t read blank stare and I can’t help you if I
don’t know that you don’t understand
Be respectful of others
Stay awake, sleeping students get sent home!
8. Demos
4. Take lots of notes! You will
need them, these will be
checked periodically
Ask questions. If I am speaking
you are not. I realize that some students believe
that they are the center of the universe and
everyone will be delighted by anything they have
to say, the truth is that is a small and distant
universe.
Remember people send a lot of money to learn,
and not necessarily from you
I try to take videos of my demonstrations and then
post them on the portal for you to view
9. Need to talk…
For the most part I am available to
talk after class. I will announce this
at the end of the day.
If you have a problem, question or
concern please use this time to address it
with me.

good news

to hear not what you think I want to hear

11. Grading
2. You are graded everyday on a variety
of set criteria. You EARN these grades
The grading system we use is called a rubric. This
means each category has a set of spelled out
criteria and a set point value this is found on the
portal.
Verbs like, perfect condition, extraordinary
