3. Sushi
Contrary to popular belief, sushi does not mean raw
fish.
Sushi originally referred to sour-tasting food in China
and Japan.
Sushi may contain numerous varieties of cooked rice
with vinegar, vegetables, seafood, cooked and uncooked
ingredients, nori (algae wraps), omelette, cucumber,
sesame seeds, wasabi, and gari (sweet and pickled
ginger).

4. Searing
Contrary to popular belief, searing (or the Maillard
reaction--named after a French scientist) does not seal
in moisture.
Searing can be done to more foods than meat, such as
bread, potatoes, onions, and coffee beans.
Searing (browning) is done to affect flavor,
appearance, and texture of foods.

6. Oil and Pasta
Contrary to popular belief, oil does not stop pasta
from sticking while boiling in a pot.
Cooking oil floats in water and will not adhere to much
of the pasta.
If oil is applied it will prevent sauce from staying on
the pasta.

7. Alcohol
Contrary to popular belief, alcohol will not completely
cook or bake out of food.
Alcohol evaporates at 172°F (78°C).
Alcohol that is boiled will retain 85%, Flamed 75%, No
heat (after 24 hours) 70%, Baked (25 minutes) 45%, Cook
(3 hours) about 0%.

8. Food Cravings
Contrary to popular belief, food cravings are not just
about nutrition.
Cravings can largely be emotional, due to stress,
reward seeking, and lack of healthy thinking.
Cravings are not the same as hunger.
Cravings for nutrition, substance, and food properties
are best fulfilled with unprocessed foods, foods not
pre-made in boxes, containers, bags, or cans.

9. Expense
Contrary to popular belief, eating fresh fruits,
vegetables, and organics is not more expensive.
Pre-made foods in boxes, containers, bags, and cans
have production costs.
Reducing eating at restaurants, foods and drinks, such
as soda pop, juice, store bought chocolate milk, TV
dinners, pre-made lunches, and the like will keep more
money in your bank account.
Better nutrition will lead to lower medical and life
costs.

11. Blood in Red Meat
Contrary to popular belief, the liquid found in
packages of red meat is not blood.
Most blood is removed in the butchering process.
The red liquid in a package is water and myoglobin that
is contained in meat.

12. Sweet Potatoes and Yams
Contrary to popular belief, sweet potatoes are not
yams.
Sweet potatoes come in yellow, orange, and red colors,
come with thin and thick skin, flesh that is sweet and
un-sweet, and comes in varieties such as Gold Rush,
Georgia Red, and New Jersey.
Yams come in brown, black, whitish, and purplish
colors, have more natural sugar than sweet potatoes,
originated in Asia and Africa, typically have more
starch and are drier than sweet potatoes.

13. Liquid and Dry Measurement
Contrary to popular belief, liquid and dry measurement
is not different (in the United States).
Americans measure by volume/space taken up (Standard
System), while most other countries measure in weight
(Metric System). Thus, in an American recipe a cup of
milk and a cup of flour is the same.
The confusion in America recipes often originates from
using Russian doll measuring cups and liquid measuring
cups. The volume will be the same, as a glass liquid
measuring cup is simply used to make measuring and
pouring liquids easier. Russian doll measuring cups
and liquid cups both measure the same volume.
