27. Types of Restaurants
• Fast food (QSR) - Fast food restaurants emphasize speed of
service. Operations range from small-scale street vendors
with carts to mega-corporations like McDonald's. Also
known as a QSR or Quick Serve Restaurant.
• Casual dining - A casual dining restaurant is a restaurant
that serves moderately-priced food in a casual atmosphere.
Except for buffet-style restaurants, casual dining
restaurants typically provide table service. Casual dining
comprises a market segment between fast food
establishments and fine dining restaurants. Casual dining
restaurants usually have a full bar with separate bar staff, a
larger beer menu and a limited wine menu. They are
frequently, but not necessarily, part of a wider chain,
particularly in the United States.
27
28. Types of Restaurants
• Family style -Family style restaurants are a type of casual dining
restaurants where food is often served on platters and the
diners serve themselves. Typically, alcoholic beverages are not
sold at family-style casual dining restaurants
• Fine dining - Fine dining restaurants are full service restaurants
with specific dedicated meal courses. Décor of such restaurants
feature higher-quality materials, with an eye towards the
"atmosphere" desired by the restauranteur, than restaurants
featuring lower-quality materials. The wait staff is usually highly
trained and often wears more formal attire. Fine-dining
restaurants are almost always small businesses and are generally
either single-location operations or have just a few locations.
Food portions are visually appealing. Fine dining restaurants
have certain rules of dining which visitors are generally expected
to follow often including a dress code.
28
29. The New Kid on the Block
• A fast casual restaurant is:
– In the US is a growing concept positioned
between fast food and casual dining.
– A type of restaurant that does not offer full table
service but has upscale or higher developed decor
– Promises a higher quality of food and atmosphere
than a fast food restaurant.
– Made-to-order food with more complex flavors.
– The typical cost per meal is in the US $8–$15
range

The better burger segment is coming on strong and pushing long time fast-food
giants like McDonald’s and Wendy’s to the side. You still get the benefits of quick, onthe-go meals but with a better tasting, better for you, made to order burger.
An astounding 95 percent of consumers said they eat burgers (including nonbeef and
nonmeat versions) at least once a month, up from 82 percent in 2009 and 91 percent
in 2011. Moreover, two-thirds of consumers (68 percent) polled this year 2013 said
they eat burgers at least weekly.
More than half of consumers (51 percent) now say they consume a burger from a
fast-casual restaurant once a month or more—a significant increase from 43 percent
who said the same two years ago.
Sixty-two percent said a burger patty’s quality/taste is the top priority in their
burger-buying experience; 22 percent said price/value for the money (the secondhighest-ranking attribute) is most important.
23 percent of consumers said it’s important that burger-serving restaurants offer a
nonbeef meat option, such as chicken or turkey. The same percentage said the same
for gluten-free burger options and vegan burgers.
