• Level 2 – Basic science behind cooking (this includes
the basic math such as fractions, liquid measure, and
weight as well)
• Level 3 – Basic knowledge of kitchen ingredient
staples (fresh produce, meats, dairy, herbs, spices
and pantry staples)
• Level 4 – Following a Recipe
• Level 5 – Knife Skills
• Level 6 – Baking Science
• Level 7 – Buying Ingredients (This will have a small
nutritional component)
• Level 8 – Cooking (This could be split into several
different areas to focus on different skills such as
sauces, soups, poultry, meat, pasta, etc.)
• Level 9 – Baking (This would be broken into bread
baking and pastry)
• Level 10 – Pairing flavors
• Level 11 – Running the kitchen
• Knife Skills
• Turkey Day Challenge
• Family Meal

  1. Teaching people to cookincluding the science behind what makes the cooking happen. They will gain knowledge of the kitchen, cooking, and food skills that they may not be getting at home.
  2. Major skills are scattered throughout the game and some build on each other.
  3. Level 0 – Kitchen overview and vocabulary (overview of kitchen appliances, utensils and basic terms)This will start the foundation and backstory of the game. The player will be introduced to the kitchen staff and their roles. In a subtle way they will be introduced to the names of the appliances and basic kitchen tools. They will have a conversation with the Chef de cuisine where they must be able to show and discuss with the chef certain areas of the kitchen. Level 1 – Food safetyIn this level the player learns about basics of food safety and has to apply them to the kitchen situation. The protagonist in this level is the local health inspector who will come in at random to inspect the facility. The player must get the food safety correct to advance.Level 2 – Basic science behind cooking (this includes the basic math such as fractions, liquid measure, and weight as well)In this level the player will begin to collect “toys” to be used later. The player will be engaged with the different cooks to understand basic science. This is a level where the player will get the chance to “mentor” with the cooks to learn basic skills. In this level there is a puzzle where the player must assemble the right measuring instruments for the particular items. Level 3 – Basic knowledge of kitchen ingredient staples (fresh produce, meats, dairy, herbs, spices and pantry staples)It is important to understand the names of the ingredients and what is located where in the kitchen. The player will be asked to retrieve items for the cooks during the dinner rush. They must figure out what they are being asked to find and where that item is. Level 4 – Following a RecipeThe player will be required to assist the cooks on several different dishes using the recipe. As they go the recipes will get harder and the stress will get higher. The player must tell the cooks what to use and how to cook the dish from the recipe they are given. Level 5 – Knife SkillsIn the Knife Skills puzzle, the player will be interacting with the Chef. He is preparing several different dishes and the player is preparing ingredients. The Chef will indicate what ingredient should be prepared, for what recipe, and what role the ingredient will play in the recipe. For example the chef will ask for mirepoix for a stock. That would require a large dice of carrots, celery, and onions. Preparing the mirepoix requires the player to know what mirepoix is, what goes into making stock, and what size the preparation should be. The puzzle will require the user to choose the correct knife for the cut and to consider the principles of “Speed, Waste, Uniformity.” The problem is that you can only have 2 of the 3 at a time. If you want speed and low waste, you’ll lose uniformity. If you want low waste and uniformity, you’ll lose speed. If you want speed and uniformity, you’ll have more waste. The player will have to choose correctly for each items in the puzzle. In judging the player the Chef will consider each of these things.
  4. Level 6 – Baking Science In the baking science the player will be learning about the intricacies of baking and what makes it work. They will not actually be baking anything on their own during this level. It will be important that they understand how to measure correctly and mix the ingredients together correctly. Level 7 – Buying Ingredients (This will have a small nutritional component)In this level the player will exit the kitchen and venture out into the streets of Paris to the markets. They have to buy all of the items on the list before a certain time. These are then reviewed by the chef and a decision is made to their quality and correctness.Level 8 – Cooking (This could be split into several different areas to focus on different skills such as sauces, soups, poultry, meat, pasta, etc.)In this level the player will have to do a large amount of cooking. They will have to gather the correct tools and ingredients for each dish. They will be required to pull together the skills they have from the previous levels in order to complete this level. A specialized challenge in the middle of this level is the Turkey Day Challenge. In this challenge the player must make a Thanksgiving dinner where all of the dishes are finished and served at the same time. This challenge will include the use of all of the items which are toys for this game. Bowls and baking dishes will be provided in the kitchen environment. The specialized ingredients will not begin to unlock until the player has all of the kitchen toys. This challenge will unlock once they have acquired a list of specialized ingredients. Over the course of the previous play they will have acquired these ingredients and placed them in the “pantry”. Normal pantry staples will be provided in the kitchen as usual.Level 9 – Baking (This would be broken into bread baking and pastry)This level would be like the cooking level. The player would be required to bake different recipes. Level 10 – Pairing flavors This is a level where the player will work with the other characters to develop a new menu. That would include all the dishes on the menu and having them accepted by the chef.Level 11 – Running the kitchenThis would be a section where the player would have to be directing the tasks of the other characters. They would have challenges like having a very picky customer, someone with food allergies who needs accommodations, squabbling staff, etc. After passing this level the story ends with the chef having a health issue, retiring (or possibly dying). You take over as the chef and that concludes the game.A glossary and kitchen dictionary will be available for the player at any time during the game.The player will have to collect all of the tools and complete the puzzles to complete the game.
  5. Knife SkillsIn the Knife Skills puzzle, the player will be interacting with the Chef. He is preparing several different dishes and the player is preparing ingredients. The Chef will indicate what ingredient should be prepared, for what recipe, and what role the ingredient will play in the recipe. For example the chef will ask for mirepoix for a stock. The chef is looking for first off the correct cut for the item and the corresponding purpose. Then he is judging the accuracy of the cut and the proportion of waste for the particular cut. The player will receive a points score toward their next level.The following cuts will be considered during this puzzle:Julienne Cut - The julienne cut is a type of stick-shaped cut that is very thin. Cut from a squared off item, you will then slice that item length-wise at a thickness of 1-2mm (1/16 in) leaving you with thin rectangular cuts. Then, take the thin slices and apply the same technique. You will end up with Julienne (Or matchstick) cuts.Dimensions: 2mm X 2mm X 4cm (1/16in X 1/16in X 2in)Brunoise Dice - The Brunoise dice is the smallest dice you can have. While you can mince to a smaller dimension, this method refers to the smallest uniform size available for dicing. Take your julienne cuts , line them up , then cut the julienne into equally shaped dice.Dimensions: 2mm X 2mm X 2mm (1/16 in X 1/16 in X 1/16 in)Small Dice - The small dice is similar to the brunoise, but it is slightly larger. Start by following the steps to Julienne your item. You want to slice your squared-off item at a thickness of 3mm. Now it’s only a matter of finishing off the dice as you would the Brunoise.Dimensions: 3mm X 3mm X 3mm (1/8 in X 1/8 in X 1/8 in)Batonnet - The Batonnet is a larger stick-cut. The batonnet is used when serving a larger portion of an item such as a vegetable side, to gain height in your dish, or to provide imposing linear appeal to an otherwise linear-absent dish.Dimensions: 6mm X 6mm X 6cm (1/4 in X 1/4 in X 2 in)Medium Dice - The medium dice is derived from the Batonnet and the only added step is slicing the batonnet to produce cubes. This size is called a Medium Dice.Dimensions: 6mm X 6mm X 6mm (1/4 in X 1/4 in X 1/4 in)Baton - The baton is the largest stick-cut you can cut. It is used for crudités and for presentation purposes. While not used as much as the rest, it is the foundation for the more common Large Dice.Dimensions: 12mm X 12mm X 6cm (1/2 in X 1/2 in X 2-1/2 in)Large Dice - The large dice is primarily used for stews, long-cooking dishes and for mirepoix in stocks. The large dice is important, because it is relatively quick, has a great imposing nature and looks professional. This is called the Paysanne. This is achieved by creating your desired stick-cut size, then slicing thinly to produce a thin square. Typically used for larger cuts, this method can be applied to smaller cuts and dices as well.Dimensions: 12mm X 12mm X 3mm (1/2 in X 1/2 in X 1/8 in)Chiffonade- The chiffonade is used when slicing very thin items such as herbs or leaf vegetables such as spinach. Cutting en chiffonade is a really simple process. Start by stacking the items you are looking to slice. Then roll up the items, producing a cigar-shaped roll. Once it’s rolled, start slicing to produce a nice chiffonade suitable for garnishing and other purposes.Allumette - The allumette cut is also used in vegetable preparation. Also known as the matchstick cut, due to its resemblance to a matchstick, the allummette is approximately the same length as the batonnet, but much thinner. A vegetable prepared this way will measure only about 0.25 inch (0.6 cm) square by 2.5 inches (6.35 cm) long. When chopping food, the chef will start with the allummette cut then slice the 2.5 inch (6.35 cm) long piece into tiny cubes called a fine chop. Nuts are often cut this way for desserts.Turkey Day ChallengeMost of the game will take place in the restaurant kitchen. I thought it would be nice to have some scenes in the home kitchen as well. This scene could easily take place in either setting but probably makes more sense in the home kitchen. I know that this game is supposed to be set in France but I am thinking now that if the market was for American's it might make sense to have the main character be an American, where they would cook a Thanksgiving dinner to stay connected to home. That could draw out a deeper emotional element to the overall story.In this challenge the player must make a Thanksgiving dinner where all of the dishes are finished and served at the same time.  This challenge will include the use of all of the items which are toys for this game. Bowls and baking dishes will be provided in the kitchen environment. The specialized ingredients will not begin to unlock until the player has all of the kitchen toys.This challenge will unlock once they have acquired a list of specialized ingredients. Over the course of the previous play they will have acquired these ingredients and placed them in the “pantry”. They are not that well-formed but I thought they might work into different levels of the game:Family MealIn this challenge the player is chosen to cook “family meal” for the kitchen and wait staff.  This is a big responsibility but it is quickly discovered that there are only a handful of ingredients to work with. The player must cook a meal that will serve 30 but that will also satisfy the picky sous-chef.The player will have access to a book of recipes but will not have access to all of the ingredients for any of the recipes. This will require improvising and understanding how ingredients can stand in for one another if used correctly. Many of the ingredients in the walk-in and pantry will look appealing but will be off-limits as they are part of meals for restaurant service.Mystery MealThis puzzle is a spin on the show Chopped and would occur later in the game play. It will require the player to create a meal using a bizarre ingredient. This could be something like black licorice in an appetizer, strawberry milk powder in a main dish, or nori in a dessert.

He is very paranoid in the kitchen and always sees ghosts.)Josette - Sous chef de cuisine (Very petite blonde but a pitbull. She is kind but has very high standards. She is the only person Jacques trusts. She basically runs the entire show. You need to get in on her side.)Raphael - Chef de partie ( He is tall, very thin, slicked back black hair, huge nose, and always cranky. nothing is ever good enough. He is gunning for Josette's job.)Tiny - Cuisinier ( he is a huge bald guy but very jolly. He takes a liking to you and helps you out a lot.)
  7. I am not sure who would actually play this game. Is there acutely a basis for this? I would probably play it.Are the skills in this game transferrable to the real world? Can this actually be a teaching game?I think that the development skills are out there and that the game could actually be built with the current platforms.
