1. Gluten Free Buckwheat Pancakes

¾ Cup Buckwheat flour
1 Tsp Baking soda
2 Tbs Brown Sugar (or unprocessed sugar such
as Sucanat or Turbinado)
8 oz Plain yogurt
¼ Cup water
¼- ½ Tsp of vanilla
2 Eggs
DIRECTIONS
Mix all dry ingredients in a bowl. Set aside. In
another mixing bowl, mix yogurt and ¼ cup of
water. Mix until it is uniform and smooth.
Whisk eggs, add to yogurt mixture, then add
vanilla. Add all wet ingredients to dry
ingredients and mix until uniform. Let it sit for
about 5 minutes before using. Cook on
medium low to medium heat.
