QUALITY NATURAL AND GASTRONOMIC TOURISM

2. SITUATION: The Natural Park of Batuecas – Sierra de Francia, declared Biosphere Reserve by
UNESCO, Special Birds Protection Area (ZEPA) and European Community Place of Interest
(LIC), is placed at the South of Salamanca province, 1 hour by car from Salamanca, 2 hours
from Valladolid and 3 hours from Madrid.

3. NATURAL AND ORNITHOLOGICAL TURISM: Flora and fauna watching (126 catalogued bird
species, among them, the black vulture and some in extinction danger, like the black
stork), hiking routes, bike tourism...

5. FARMING: At the Sierra, we meet the ideal conditions for cultivating vines and olive
trees. Cámbrico winery and Soleae olive micro-mill are the best examples: Both have a
similar philosophy of environment respect (organic farming), both recover native
varieties and produce limited productions of high quality wines and extra virgin olive
oil, respectively.

6. GUIDED TOURS: At Cámbrico and Soleae, our visitors learn and enjoy a very special
experience. Each visit takes around 2 hours.

7. The VISIT TO CÁMBRICO (Villanueva del Conde), begins at the vineyard, watching the native
varieties that we cultivate: Tempranillo, Rufete and Calabrés. We explain the Rufete
recovering project (it was about to become extinct), as well as the way we cultivate
organically and harvest the vineyard, planted on terraces...

8. ...Once at the winery, we show the careful process that is followed to obtain each wine,
just using the gravity for its movements, without pumps and we finish the visit with a
wine tasting, accompanied by some iberian ham of the region.

9. The VISIT TO SOLEAE (Herguijuela de la Sierra) begins at the field, where we explain the
native olive varieties we cultivate: Ocal and Manzanilla Cacereña. As well, we see the
cares that our olive trees, of several hundreds of years old, need to be cultivated
organically...

10. ...Once at the small mill, placed in the middle of the village, after watching how the
extra virgin olive oil (AOVE) is obtained, just by mechanical methods, we explain the
differences with the rest kinds of oil, that will be appreciated later in the tasting.

11. RESTAURANTS: We recommend, at San Martín del Castañar, “El Mesón de San Martín” (menu: 15
€), “La Posada de San Martín” (15 €) and “Porta Coeli” (special menu: 28 €); and at
Miranda del Castañar, “Posada Miranda” (12 €) and “El Molino” (à la carte).
