Pasta Sauce with Eggplant
1. Pasta Sauce
With Eggplant
Make a healthy food of whole wheat pasta with
tomato eggplant sauce. A perfect match to other
healthy meals.
Ingredients:
2 T extra-virgin olive oil
2 cloves garlic, chopped
3-1/4 c tomato puree
kosher salt to taste & freshly-ground black pepper
crushed red pepper
3 lg basil leaves
1 lb eggplant
1 lb pasta (penne or other)
pecorino romano cheese (to taste)
Directions:
Heat olive oil in pan. Add garlic and saute.
When garlic becomes aromatic, add tomato
puree. Season with salt, pepper, crushed red
pepper, and basil. Cover and simmer 10
minutes.
Meanwhile, slice eggplant thinly and place on
baking sheet. Brush both sides with olive oil.
Broil at 500 degrees for 3-4 min per side.
Remove from broiler and chop; add to sauce.
Replace lid and simmer 10 more minutes.
Cook pasta according to package directions.
Drain and place in large serving bowl. Toss with
sauce and top with pecorino romano cheese.
