- 2. Salmonella Salmonella is an important foodborne pathogen responsible for frequent gastroenteritis, intestinal illnesses, foodborne outbreaks and deaths worldwide. Salmonella is a genus of rod-shaped (bacillus) Gram-negative bacteria of the family Enterobacteriaceae. Generally, humans acquire infections through consumption of contaminated food products of animal origin such as eggs, milk, poultry, pork, beef and others. They are facultative anaerobes.
- 3. Detection methodologies Salmonella can be detected by : - immunochromatography - PCR - SRCA The ideal method should have high sensitivity and specificity, and at the same time be simple, rapid and inexpensive.
- 4. The aim of this study was to develop a saltatory rolling circle amplification (SRCA) assay for rapid, simple and visual detection of Salmonella in meat “ ”

SRCA Is an enzymatic amplification technique that seeks to identify and amplify a specific DNA sequence “saltatory rolling circle amplification” PRC REAL TIME is a variant of the polymerase chain reaction (PCR) used to amplify and simultaneously quantify absolutely the product of deoxyribonucleic acid amplification.
- 7. the longer the time, the better the distribution of the bands, the better the interpretation. at a temperature higher than 60°C, the better the band distribution. more specifically at 64°C
- 8. prc real time gives me a quantitative result of the genetic material being evaluated. the result is simultaneous. the performance of the test is analyzed to be able to commercialize it, that is why the time, temperature and concentration are measured.

- 10. CONCLUSIONS Molecular biology has made it much easier to diagnose patient diseases thanks to the molecular tests that have been developed. Molecular biology is one of the broadest and most developed fields in medicine. Molecular biology connects the past with the present and the future, taking into account that thanks to the technology of now (present) we can study and analyze millions of things from the past that serve us for future studies, diagnoses and technology improvement.
