To Whom It May Concern,
I confirm that Jason Bruner was employed as a Consultant Chef with Arkos Mojo Grill & Martini Bar from December of
2012 to April of 2013.
Jason’s job as Consultant Chef carried the following responsibilities:
o Design and layout of our 1800 square foot kitchen
o Development of several menus to suit our newly developed concept with recipes for all conceptual
menu items
o Establishing portion control for each menu item.
o Calculating the pricing guide and food cost for all ingredients necessary to prepare final menu.
o Directly dealing with food purveyors and establishing key relationships with them
o Recruiting, hiring and training kitchen staff on all elements of running an efficient kitchen
o Developing a training manual with operational procedures specific to our kitchen, which ensured
proper food preparation and storage.
o To develop an inventory system that is easy to calculate waste, food cost, and overall usage compared
to product mixes.
From day one, Jason energetically and enthusiastically developed a new kitchen into a successful and efficient
operation. Jason’s attitude was exceptional and he was willing to always listen and try new things. Jason’s culinary
training at the Culinary Institute of America coupled with his various culinary positions held round the world has
developed him into a world-class Chef. Jason’s leadership skills coupled with his patience with different levels of
kitchen experience makes him a great instructor and student. He is certainly qualified to make a difference in any
kitchen he is placed into, while his eagerness to learn and perfect his skills makes Jason a perfect candidate to bring
into any kitchen with any style of cuisine. I would willingly and gladly re-employ Jason Bruner if the opportunity arose.
