As Medical studies continue to demonstrate
the health benefits of cocoa and dark
chocolate, consumer demand for these
products has drastically been increasing over
the past few years.
However, although various medical
associations recommend the consumption of
dark chocolate with high cocoa percentage
(50%-60% cocoa percentage by weight), the
market demand has been tempered by the
natural bitterness associated with high
percentages of cocoa in dark chocolate. In
essence, as the percentage of cocoa in dark
chocolate increases so does the associated
bitter taste!
In addition, the high cost of cocoa butter led
several global confectionery brands
(Hershey®, Cadbury®, Lindt®, Nestle®) to
replace some of the expensive cocoa butter
with vegetable fat or Milk fat. This only
increased the fat content and reduced any
benefits associated with the Oleic Acid found
in Cocoa Butter.
Vivatchi® chocolates are distinctively
different from all other chocolates in the
world.
Vivatchi® chocolate utilize a proprietary blend
of white, raw and brown cane sugars and
flavor extracts that eliminate all the
bitterness of dark chocolate while preserving
the full flavor of the chocolate. Also, Vivatchi
uses only natural Cocoa Butter in all of the
chocolate collections to produce smooth, silky
and creamy chocolates.
Also, in contrast to other milk chocolate that
has low percentage of cocoa and full fat milk,
Vivatchi® “Dark Milk” collection include a
balance of Whole and skim milk in order not
to increase the fat content of the final
chocolate and almost double (41%-45%) the
percentage of cocoa found in other milk
chocolates.
As a result of these combinations, Vivatchi®
fine chocolate varieties are smooth, creamy
and sweet with full chocolate flavor and
without even the slightest hint of the
traditional bitterness associated with other
dark and high cacao percentage
chocolates.

  • 2. As Medical studies continue to demonstrate the health benefits of cocoa and dark chocolate, consumer demand for these products has drastically been increasing over the past few years. However, although various medical associations recommend the consumption of dark chocolate with high cocoa percentage (50%-60% cocoa percentage by weight), the market demand has been tempered by the natural bitterness associated with high percentages of cocoa in dark chocolate. In essence, as the percentage of cocoa in dark chocolate increases so does the associated bitter taste! In addition, the high cost of cocoa butter led several global confectionery brands (Hershey®, Cadbury®, Lindt®, Nestle®) to replace some of the expensive cocoa butter with vegetable fat or Milk fat. This only increased the fat content and reduced any benefits associated with the Oleic Acid found in Cocoa Butter. Vivatchi® chocolates are distinctively different from all other chocolates in the world. Vivatchi® chocolate utilize a proprietary blend of white, raw and brown cane sugars and flavor extracts that eliminate all the bitterness of dark chocolate while preserving the full flavor of the chocolate. Also, Vivatchi uses only natural Cocoa Butter in all of the chocolate collections to produce smooth, silky and creamy chocolates. Also, in contrast to other milk chocolate that has low percentage of cocoa and full fat milk, Vivatchi® “Dark Milk” collection include a balance of Whole and skim milk in order not to increase the fat content of the final chocolate and almost double (41%-45%) the percentage of cocoa found in other milk chocolates. As a result of these combinations, Vivatchi® fine chocolate varieties are smooth, creamy and sweet with full chocolate flavor and without even the slightest hint of the traditional bitterness associated with other dark and high cacao percentage chocolates.
